  • "Sinuglaw" is a portmanteau of "sinugba" and "kinilaw". Sinugba means grilled while kinilaw means eaten raw in the Bisayan language. Kinilaw is often recognised as the Filipino version of ceviche. So this Filipino dish is a marriage of two very different kinds of food preparation!
While this dish is said to have originated from Davao, you can easily find it in restaurants and eateries all over the Philippines. It's definitely a Filipino favourite!
Today we will be preparing it with a classic grilled pork belly and raw tuna in coconut milk pairing. We'll also be cooking at Casay Beach Park, a beautiful public beach with azul waters in the south of Cebu. But before that, we'll go up the mountain for a stop at Mantalangon Public Market to buy our fresh meat and veggies!
Have you ever had sinuglaw before? Let me know in the comments!
