If you buy a bunch of fruit or veg and chop it up in a pile on the floor it'll just dry by itself and never rot. Same goes for bread. The drying rack is pretty much useless. Bread won't keep the scurvy away, but it's a cheap source of calories that dries by itself. Sausages are raw meat, which gives much less nutrition than raw fish and rots even quicker. Cave mushrooms and field mushrooms apparently contain a lot of vitamins and are relatively cheap for a small box with a lot of preserved mushrooms. I've just made it to DC in a medieval rigged cog via Happy Bay, with two square sails and a square spritsail, and no jib. Square sails only, no compass or quadrant, navigating by wine bottle and vibes alone. You can sail pretty close to the wind and make it through storms on just a sliver of the mainsail. Storms were almost constant, with a few breaks to catch my bearings from the north star, sun or moon. Sails up pretty close to the wind but a very exciting challenge when heavily loaded. I filled the living area with sliced, drying bread and fruit and beer bottles, and woke up on day 11 right by HB. I didn't even get scurvy!
