Working in the restaurant business, you will eventually be moved around to different positions. To move from a dishwasher to a cook, to a server, and eventually into management. I always took it as Scube dealing with himself at different ages. He plays Keven well because he was Keven in his life. Dishwashers do not make shit so a lot of them are either retired or are dealing drugs on the side to make it. The different phases in his restaurant career are all on display. The chef, who is managing the chaos, the server, who has to bite his tongue when dealing with the customer BS, the cook who is fighting his violent urges due to being slammed, and the dishwasher who does not give a fuck.
