Thanks Roland for this great recipe. Tried this today for dinner it was a hit!!! I replace the mushroom with prawns and carrot. Also added tofu and vermecilli to the soup. It is comfort food rich and delicious at its best.
This is so good. Tried this tonight and added diced water chestnut to heighten to the texture of meatball. I used home made chicken stock (from boiling of chicken feet with ginger, scallion, garlic) to do this dish. There is no need further seasoning needed after the meat balls were added and the soup was so rich and tasty . Super satisfied with this, thank you chef!!
Still super cold in Utah. Made this with only ground turkey instead and it turned our amazingly and is delicious. The fresh vegetables are crisp and sweet against the broth and meatballs. Will be making this to keep warm! Another winner.

Hi G L. Yes you can but it would be easier to just pan fry them. If you wanna air fry, 180C for about 15 mins should be fine since these meatballs will be cooked again in the soup. Happy cooking!

Haha. You can make it smaller if you like but in Chinese, this is called 狮子头(Shi Zi Tou) literally translated as lion’s head and the size of the meatballs is supposed to be big.
That looks delicious. May I ask why you leave out the egg yolk when making the meatballs? I make a lot of Italian style meatballs and always use a whole egg. Maybe I’ll start using just the white if it’s better?

But here are some problems I face regarding chicken stock, not always I have the chicken stock ready at my hand and a decent chicken stock takes 2-3 hours of simmering time which is not very fast or convenient and also not always the chicken bones and feet are available at the market. I was just wondering if I can make this work without having any dependency on this stock.
