Is it possible to choose a scene that a motion sensor will activate? In the app I see only pre-made scenes (like Read, Energise), but I can't choose any fancy or my own ones.

I'm looking to do similar in my bathroom where the lights and often the fan (which is switched separately) are often left turned on all day 😱. My fan has 2 speeds (again via a 2 position switch) so I'm looking to automate by turning the lights and fan on (on low speed) upon a person detected, then if the detection remains for a period of time ( for example when someone spends longer due to doing a "number 2", or using the shower) the faster speed will be switched until a certain time after detection had ceased. I'm not sure yet how to deal with switching the 2 fan speeds, I'm still looking at ways of doing this....any ideas?
Depending on your fan switch I wonder if you could create something that uses a switchbot button pusher? amzn.to/47Y3BEO You could then use something like an Apple Home automation to trigger it when the light status changes (The Switchbot Bot is matter/homekit compatible when used with the Hub 2)
