  • Thank you for watching my Bratwurst Recipe video. On this video, I make some homemade Sheboygan Bratwurst along with some green chile cheese bratwurst. This was a very simple bratwurst recipe and I gotta say these are by far the best bratwurst I've ever had.
    The Sheboygan brats had a really good authentic bratwurst flavor and the green chile brats with cheddar cheese were out of this world good! The PS Seasonings along with the high temp cheddar cheese were spot on and really good!

    Great video. I've been making sausage 40 years, shop and home, I learn something new with all your videos. I keep a bottle of Bombay in the freezer and sometimes use that instead of cold water in small batches.

    I simmer my brats in beer, the cheaper the better, and onions but also with butter and sauerkraut. Then after I grill them they go back in there to stay warm. And when you get one out you can get some onions and kraut to go with it. I learned that in Shawano, WI.

    I started sausage and meat snack making as a hobby during Covid lockdown. PS Seasoning is also my go-to for spice packs and I absolutely LOVE their Sheboygan brats!! Since I only do this as a hobby and make much smaller batches (like 5 pounds at a time), I unfortunately can't see a smoker in my future. I don't like to add my spices until after I grind the meat. It doesn't make much difference with the Sheboygan brats but, if you ever get into PS Seasoning's Italian Sausage (which is also excellent!), you'll find that the spice packs come with all sorts of whole spices that add a little crispy, crunchy, spicy punch that will be lost if you smash them in the grinder. I use beer instead of water when I mix the spice with the ground pork because I am not going to boil them. I add diced jalapenos and onions, case them, and toss them straight on the grill while vacuum bagging and freezing any that aren't immediately used. my favorite part is that it tastes better than what you get at the store and you control what goes in it so that it isn't full of science project ingredients that you can't pronounce.     Those sausages sure looked tasty. Especially the green chili & cheese. Only 3 sausage making videos under your belt…your learning curve was short. You’re becoming incredibly good at this. You’re also lucky I don’t live near by, I’d be peeking over your fence often. Is your cousin concerned sausage competition may be knocking? Thanks for sharing.

      Thanks Mark. The funny thing is I'm still learning so much and there are things I know I could improve in the process. I remember going through this while learning to smoke briskets. My cousin is a well established business and I can't compete with him on any level. Having said that, I'll challenge him to see who can produce a better brat. 🤣👍

    One of my favorite things about this channel is that, unlike many other food channels, Joe doesn't say "from scratch" or "my recipe" when using pre-made seasoning pouches. It bothers me to no end when people say, "Here's how to make this from scratch: first, get this pack of seasoning."

    They’ve got some great beers also! Something I like to do is add some velveta and cheddar and a bag of frozen bell peppers to the beer and onions mixture and make a beer cheese sauce too put on top of your brats.

The nice thing about homemade is you control what is added ! Well, kind of with using a pre mixed seasoning ! I got to get me a good grinder and stuffer ! What brand do you recommend?

    You can save the bones in freezer for when you make pezole, beans, or any stew. Dont throw it away, you can even cook them in oven and give to dogs to chew on.

    Awesome videos man. One thing I’m curious about, when you are ready to bag/vacuum seal them, how do you keep the ends tied after you cut them individually? It seems like the spins would come undone and the meat would come out of the ends?

      you let the brats dry for a hour or so in the fridge . if you haven't over stuffed them the meat should stay in the casing when you cook it.

    Hello once again love your video the info your giving is really helpful. I need your help a just my grinder and it only came with the 10mm grinder plate and the 4.5 grinder plate i plan on making hamburger should i run it thru then 10mm twice or should I run it thru the 10mm then the 4.5. Once again thank you for the help

      @@SmokinJoesPitBBQ Don't you think a second pass through the 4.5mm would make the meat too dense when pattied for burgers? I would think only a second pass through the 10mm, if at all.

      @@jerryk9266 not at all. One thing you could try is run half through the 10mm twice and the other half go 10mm then 4.5mm. See which one you like. 👍

      Pretty much but on a Yoder you can do low&slow or hot&fast. Both ways produce great tasting food. 👍

      There is zero MSG in the Seasoning from PS Seasoning.
