    I have a bit of an opposite hack for folks new to cooking, which is to experiment by limiting spices in the cupboard and in cooking for a while, using just one spice in a dish to see what it can do (along with salt and maybe pepper, which are just standard seasoning). I am someone with a huge cupboard of spices and learned to cook from childhood, but it wasn't until I started a project of using only one spice for a week or month at a time that I really started to deeply understand spices and herbs. This is how I discovered that if I added cumin to a dish, it would yield a meatier taste. So then I started experimenting with adding cumin to lentils, onions, carrots, minced mushrooms, and peas as a foundation for a vegan shepherd's pie. When I lived in India the family I lived with taught me to experiment with spices this way in dal and sabzi, with salt, turmeric, and chili being the basic foundation, then trying to add one spice on top of that to see how the flavor comes through. Really helpful for building flavor knowledge and making experimentation simpler, and to learn that when you use salt and spice appropriately, a little goes a long way.

    I've been vegan for almost seven years (which is how long I've been watching your channel. I found it when I was trying to find recipes and vegan food advice). But hearing your advice on what to stock up on was still so interesting and helpful. I'll definitely be referring back to it later!

    Those carrots are gorgeous! It's hard to find carrots with their tops intact at my local grocery stores. When I do find them, it feels like such a novelty. Then I get to live out my childhood game of pretending to be Bugs Bunny. 😄

    Top tip for beginners is to visit your local library an borrow books. Or see what books at other libraries in the same area - you can often have them transferred for free/low cost (mines 50p)

    Really enjoyed this, I have only eaten meat in one meal since January 1st 🙌 I know you have done budget vegan food shop videos before but new viewers may not realise that a plant based diet really doesn’t need to be expensive! My food shopping costs me so much less now and I thought it would be pricey. Can’t wait to buy your book on payday 😊

    I made a vegetarian paella from a vegetarian cookbook and it said to substitute saffron for turmeric as saffron is very expensive and substitute rice for pot barley and it turned out really delicious 😋. Love your channel ❤

    This was helpful, especially to someone growing their vegetable meal recipes. Incorporating what we already have in our pantry as the base of our recipes feels less daunting, than searching all new recipes & ingredients.

    Ah, a video for me! Useful for having a “getting things in stock” video. This is my fifth attempt at doing Veganuary but I’m not beating myself up this time when I realised my 100&1000s contained beeswax or I’ve still got some honey in the cupboard. I’ve been mindful of what animal products I do have in stock for the past 5 years or even when I’m out eating fish. I have the new bosh meat book and a lovely book called “part time vegan.” I need to buy your book too.

    Thanks for these tips! I wonder if it would be possible for you to do a video about how to use some ingredients that are unfamiliar to non or new vegans. In particular nutritional yeast and tofu. I am loving your cookbook.

    The tune of the washing machine was really helpful actually. Reminded me I needed to empty mine (We also have a Samsung :-D) Love to see what is in your pantry. I think we have to much stuff we don't use often or use at all. Going to make lists of everything and see what needs to be used.

    Great vlog. We've done meal planning for about 10 years, it helps out so much. But like you said, we only plan for Mon-Fri, because you just don't know what's going to happen on the weekend. Another tip, is getting some chicken salt aswell, I use it ramen and it's so fantastic and completely vegan. Also can use it, if your making your own vegan meats.

    This was really helpful. I tend to start with gathering recipes when it make MUCH more sense to start with taking stock. And speaking of gathering recipes, I have a massive Excel spreadsheet of my cookbooks with a list of ingredients only to find through you a much more sophisticated and efficient method of housing that information. Eat Your Books is AMAZING! They even have my most-used book which was published back in 1996. Thank you for the suggestion.

    I keep a grocery list by aisle on my fridge, and as I cook and use up items, I check them off as needed on the grocery list. I still go over the list before I shop, but I don't have to do a full inventory.

    I'm trying to eat less meat per week. I didn't realise I liked lentils as I always cooked dried and they were super meh. Tinned lentils though 👌

      There are different types of lentils, maybe you were cooking the 'wrong' ones, or in the wrong way. Nothing wrong with jjust getting a tin tho 😁

      Hello, I whizz up a whole bag of spinach/kale with a little water, and divide it between silicone cupcake cases, then freeze. When frozen, tip out into a bag and you have small frozen cupcakes of greens to use as and when. Hope that helps :)

      I pick through it, wash it and dry it by spreading it on a clean towel. I put some in a lettuce keeper for the week and then freeze the rest in a bag. Whenever I make a soup, pasta dish, curry, etc, I crumble frozen spinach into them.
