I made this pie and it was very sour. Next time I will cut back on the lemon juice and also taste the filling it before putting it into the pie in case it needs more sugar. I tend to like a little tartness, but this was way too tart. Could be my raspberries were more sour than normal. It was a learning experience for sure. I will serve it with ice cream to add some sweetness and will try again with some adjustments.
I wouldn't suggest replacing the sugar in the crust with honey. However, you can replace the 1 cup of sugar in the filling with 1/2 -2/3 cups of honey. Hope this helps ☺️
