Nice video and a fine looking piece of meat! I do have to ask why there was absolutely no rest time given before slicing. Even 15 minutes resting can make a large difference in the end result. Keep up the great content. Happy New Year!
Great point and absolutely correct. Honestly we were hungry and kids were waiting to eat upstairs so I just did it. But the correct way IS to let it rest! Thanks for pointing this out.
Good question. The bones on the meat provide flavor while cooking. However, if you go ahead and slice it now and then tie them on when you go to finish the product in the end all you have to do is cut the string. The bones fall off and it’s easy slicing, but again, leaving the bones on in the beginning provides flavor - As well as presentation. Also, some people will put rub in the area before tying them back on just for additional flavor since it’s such a large piece of meat. I typically don’t but it works as well.
