    I first used the stainless steel thermometer (2nd example) 52 years ago when I took home ec as a senior in high school. I loved it so much that I convinced my mother to buy one.

    Great tutorial! Just something to consider, water boils at 212F at sea level, but not at high elevations.

    I just watched your tutorial on candy thermometers. You explained each one so well. The only one I have ever used is the like the first one you talked about. I never cared for it for the same reasons you mentioned. I'll have to find one like the second one you discussed. Thank you very much! 😊

      Same here. And exactly what he explained, was happening with the bottom touching the pan, then I’d adjust it, so it definitely wasn’t reading correctly.

    Thank you for the tutorial. I think that's probably why my divinity didn't work out last year. I have a candy thermometer, but I lowered the clip as far as I could to make sure the thermometer was in the syrup, and I know it rested on the bottom of the pan.

    Thank you so much, Tom and Melissa! I have never had a candy thermometer, so I usually don't make candy that needs one. My mom always did the ice water test, but I never got the hang of it. Now I know what to get. Perfect timing, too, with the holidays coming. 👍

    Thank you for clear explanation of using a candy thermometer. I was taught the old way by my mother using cold water in a clear glass and checking for a soft ball, which is great info but it is time consuming.

    Thank you so much. I have the glass tube kind but I really think that part of the bottom is gone. I bought one the other day and I purchased the kind that the bottom has metal and sits on the bottom of the pan. Thank you so much for the learning about cany thermometer. I am ready to make some of your recipes with my new gadget especially your divinity. I have really enjoyed your 12 days of Christmas. I have printed all of the off. I copied and pasted them, then printed. I have all my recipes in a file on my laptop

    Excellent! Thank you for taking time to do this! I still need to get caught up on the most recent video. All are fabulous and a lot of work to do it every day. I attempted the fudge last night; it was a semi disaster!😅 The taste was great, but it didn’t set up… user error! Our craft store has the type of thermometer you use, I will get it and try this again… today. I’m not giving up. You and Melissa are great! The folks at your school must have been so sad to see you go!

    Great subject to bring up, my question may be dumb but I've always wondered, can a "meat" thermometer be used to make candy?
    I just don't understand what's the difference,

      212 degrees or 180 degrees has to be the same no matter how it's measured. Ease of use has to be the difference between thermometers.

    Thank you for doing this. Very informative. Maybe you can do one on your Kitchen Aid mixer. I only own a handheld mixer but after watching you use yours, I think I will save up for one!!

    Thank you for the information. One question I have is what is the difference between a meat thermometer and a candy thermometer? Some people say they are interchangeable, and some say they are not.

    Yes I used the Taylor thermometer and I couldn't read it correctly it had condensation and my fudge didn't set, so I tried to recook it and now its like tootsie rolls gummy. Thank you for this video. I will buy a new one.

    Most all candy recipes are formulated for a sea level reading (212 degrees), All thermometers should be checked for your altitude and accuracy......they will vary and nothing will be wrong with the unit. You may be living a few hundred to a few thousand feet above sea level but with these directions your thermometer will work perfectly, As Tom said readability is very important. Put your thermometer in a pot of water and when it has boiled a full boil for 2 or 3 minutes take a reading. If it reads BELOW 212,,,,, SUBTRACT the difference.....from every recipe......at my house (I AM AT 6600 FEET) water boils at 200 degrees, I SUBTRACT 12 degrees from every recipe. If by chance your thermometer reads ABOVE 212 degrees ADD the difference to every recipe and it will work for you. I have several different units and the one I like best is a tube type, much like Tom's that I bought at a flea market for 25 cents. I just check with a wooden spoon to keep it off the bottom of the pan. Thanks Melissa and Tom for your delightful recipes and great instructions.....you do a terrific job.

    My new candy thermometer will be here Wednesday!! My old tube one failed me after all these years!! 😭 Didn't know until my fudge got ruined. I do have a digital but, I get tired of turning it off and on. Lol. I'm getting a stainless steel with adjustable pot hook for the small and big batch!!

    The 1st thermometer,I don’t like that it fogs on the inside when I wash it.When making “candies “,I make multiple batches back to back.I have another thermometer like the 1st,it is totally enclosed instead of the “lid” like you showed.It doesn’t fog.The 2nd,I washed it and the numbers washed off.But I really like that 1.The digital thermometer,I don’t trust that it is accurate.I didn’t think to test it lol.

    I thought you had a handgun on the counter to begin with. LOL A question about the laser one: does it tell you when you're at, say, the hard ball temperature or do you have to know what that magic number is? I hope that makes sense. Thanks for the tutorial.

    Thank you, thank you, thank you! I have always been uncomfortable about using a candy thermometer; so, I just don’t. I know I am going to feel much more comfortable now using one. Now all I have to do is go out and purchase one.LOL. BTW, Does anybody know if I could use a candy thermometer to measure the temperature of fat for frying?

    This is a question about another video you had and something happen about half way into the video and I lost connection and I have not been able to find it again can you tell me how to find it. It is a video with you showing how to make Mac and cheese and you used Velveeta cheese in it..

      In the UA-cam search bar, just put, "Macaroni and Cheese - extra cheesy with a surprise ingredient- a favorite with everyone", and it should take you there. You can also just put, "Come Sit At My Table Mac And Cheese", and it should take you there.

    Water boils at 212F at sea level and decreases 1 degree for every 500 ft elevation increases.
