  • Ivan Orkin has revolutionized Ramen. A dish that was often thought of as the fast-food of Japan, it has now become an art form and a technique-driven, ingredient-focused speciality. Orkin often says that he does not know where his American-ness starts and his Japanese-ness ends. After years in Tokyo, he has returned to New York to open the ultimate Ramen Shops on both the West and East Sides.

    I have only eaten instant ramen and whenever i try to slurp, my who mouth is burnt due to hot soup. anyone have a tip for me to enjoy soup without burning my mouth?

    Actually some ramen broths like Tonkotsu actually gets more rich in low temperature..

    You pay $20 or so to eat at his place; he wants you to eat quickly and get out of his restaurant ASAP. That's not the New York or American style. If you want us to leave quick, you better sell $6 bowl of ramen!!
    People go to any restaurants or diners to socialize with others; to know better their other one; to unwind oneself and also to fulfill one's hunger. But not eat quick and go for $25!!
    The way he is implying: eat as quick as possible and get the fuck out of here.

    I don't want to be rude but I thought he wanted to eat Ramen as Japanese do. So some pieces of advice for him. First of all, he is making too much noise. Second of all, he lean his head too close to the bowl(called a dog way eating) .They are regarded as bad manners in Japan.
    For everyone, some people believe slurping and making noise imply gratitude to a chef or something. It is completely nonsense, there is no such habit in Japan.

      He lived in Japan for 20 years and owned a successful ramen shop in Japan. I think he knows what he is doing.
