    I just made this. It is indeed restaurant quality. I've always thought that this dish requires yoghurt. But now I realise that it's the cashew nuts and sesame seed that gives this dish the rich flavour. So appreciate your sharing this recipe Ruchi. 🙏

    Just made this. I’ve been trying to replicate the restaurant taste masala for like months now. THIS is exactly like restaurant style. Thank you it made my day making this dish lol. I added some cilantro directly to sauce, used vegetable broth for more flavour, a bit less oil but enough to cover the bottom of the pan, some coconut cream and only one chilli and it’s just perfectly spicy and not too spicy.

    Sauce recipe:
    -1 cup of tomato puree
    -1 TBS ginger/garlic paste
    -1 TBS sesame seeds
    -10 cashews
    -1 tsp cumin seeds (Jeera)
    -1 TBS coriander powder (leaves not seeds)
    -1 TBS garam masala
    -1 TBS Kashmiri red chili powder (i've heard this is mostly for colour, can use other chili powder)
    -1/4 tsp tumeric
    -salt to taste

    I'm a 52 year old type 2 diabetic.. although I only eat primarily fowl and fish I'm ready to switch to a more vegetarian style so help me maintain my proper weight so I can get off of my medication.. And in my opinion the best vegetarian food comes from India and Southeast Asia.. I definitely will be trying this recipe.. Indian food is delicious.

    ingredients list as far as i can tell. she doesn't give quantities or units for some of them.
    carrot 1
    potato 1
    green beans
    cauliflower
    (these four appear to be in equal portions)
    onion (purple) 2
    chilis (green) 2
    tomato puree 1 cup
    ginger garlic 1 tbsp
    sesame seeds 1 tbsp
    cashew (whole) 10
    jeera 1 tsp
    coriander powder 1 tbsp
    garam masala 1 tbsp
    salt
    kashmiri red chili powder 1 tbsp
    turmeric ¼ tsp
    oil 2 tbsp (looks like canola)
    coriander (fresh, chopped)

    I would suggest instead of throwing off the veg boiled water, keep it aside and later add the same water when u add vegetables to the curry. While cooking with water all the vitamins we might loose if we throw that water.

      True! Don’t throw the water from the veggies- you are losing all the nutrients instead save that and use it instead of the plain water 👍

    Tried this ! It turned out good .. the only thing I added was better than bouillon and scotch bonnet and it kicked up the flavors a tad more. Other than that great recipe . Oh used less oil and let all my veggies cook down together .. turned out great ! Thanks so much for sharing

    One of the best curries I’ve made. I’m used to putting cinnamon stick, bay leaf, cloves and cardamom into the curries I normally cook so was sceptical as to what this would turn out like, but it was excellent😋👍

    Great recipe. One issue that I have is when I blend the cashews and sesame I get a powder rather then creamy substance. Any idea what I am doing wrong?

    i cant get smooth garlic paste in my vitamix, and when i vitamix blend the nuts and seeds, its chunky not smooth

      Try mincing your garlic or you can buy a combination of minced ginger and garlic. For the cashew sesame mixture a small blender works best and add just a little water to get a smoother consistency.

    I’ve been trying to cook curry’s from scratch many times and never got it quite right.

    Here is an english transcription of the steps (in English)
    Prep the Vegetables:
    Wash all the vegetables. Peel and dice the carrot and potato into small, bite-sized pieces. Cut the green beans into 1-inch pieces, and break the cauliflower into small florets.
    Boil the Vegetables:
    Bring a large pot of water to a boil. Add a pinch of salt. Carefully add the diced carrots, potatoes, green beans, and cauliflower florets to the boiling water. Boil them for about 5-8 minutes, or until they are just starting to become tender but are still slightly firm.
    Drain the vegetables in a colander and set them aside.
    Roast Sesame Seeds and Cashews:
    Follow the previous instructions to dry roast and grind the sesame seeds and cashews into a fine powder. Set aside.
    Sauté Onions and Spices:
    Heat oil in a large pan or wok over medium heat. Add the chopped onions and sauté until translucent. Add the green chilis and ginger-garlic paste, cooking until fragrant.
    Stir in the cumin seeds, and after a few seconds, add the tomato puree, coriander powder, garam masala, salt, Kashmiri red chili powder, and turmeric powder. Cook for about 2 minutes, stirring frequently.
    Combine Vegetables with Spice Mixture:
    Add the pre-boiled vegetables to the pan with the spice mixture. Mix well to ensure all the vegetables are evenly coated with the spices.
    Simmer the Curry:
    Add just enough water to create a sauce for the curry (about ½ to 1 cup, depending on your preference for thickness). Bring to a gentle simmer and cook for another 10 minutes, or until the vegetables are fully tender and the flavors have melded together.
    Thicken the Curry:
    Stir in the ground sesame seed and cashew mixture. This will help thicken the sauce and add richness. If the curry is too thick, you can add a little more water. Let it simmer for an additional 5 minutes.
    Final Touches:
    Check for seasoning, adjusting salt and spices as needed. Turn off the heat and sprinkle with chopped fresh coriander.
    Serve:
