Goan Chicken Caldine | Chicken in Coconut-Milk based Curry

The Goan Caldine is a special Coconut-Milk based curry. This time I tried this Caldine curry with Chicken (I usually cook it with fish) and it turned out to be simply delicious- the lip-smacking, finger-licking kind! I cooked the curry using MAGGI MAGIC CUBES- CHICKEN. If you're a fan of Thai curries, this one will be something you'll enjoy, since it has some creamy coconut-milk goodness :)

Oh so the masala paste is used to extract the thick and thin, don't you think the paste added in full would have made it tastier, please guide me as I have no idea, thank you

The Caldine curry is best when smooth, that's why it's best to strain it through a sieve. Adding the paste would make it a bit thicker, like a verdur curry. You could search for my demonstration on the Goan Verdur. Thank you for your interest✨

About the coconut milk curdling, I have not encountered such an issue till date, so maybe my advice won't be very helpful, but you could try it. Add the thin extract during the cooking process and only when the dish is ready, add the thick extract. Simmer for a few minutes and turn off the heat, this might help.
