    Veg Enchiladas Ingredients
    For the filling
    1 tbsp olive oil
    1 tbsp chopped garlic
    3 white spring onions chopped
    1 large green capsicum chopped
    1 cup Rajma beans (soaked overnight & boiled in salted water till soft)
    Salt to taste
    1 tsp sweet paprika
    1 tsp cumin powder
    1/2 cup onion greens
    For the Ranchero sauce
    1 tbsp olive oil
    2 large red capsicum
    5 large tomatoes
    1 tbsp garlic
    2 white spring onions
    1 tbsp refined flour
    4 tbsp malt vinegar
    2 tbsp sugar
    Salt to taste
    1 tsp cayenne pepper
    1 tbsp parsley
    Few leaves of basil
    1 cup Water
    1 tbsp habanero sauce/any other smoked spicy sauce
    For the assembly
    6 nos tortillas discs
    Mozzarella cheese as required
    For garnish
    Parsley sprigs
    Olive oil
    Method
    - In a pan add olive oil, garlic, whites of spring Onion, capsicum, boiled beans ( boiled with salt & water ) add some salt, sweet paprika and cumin powder. Stir it properly
    - Mash the beans with spoon or potato masher.
    - In a pan add olive oil, red peppers, crushed garlic, whites of spring Onion, tomatoes, flour, malt vinegar, sugar, salt, cayenne pepper, parsley and fresh basil.Also add little bit of water
    - Blend the mixture and keep it on flame for 2-3 minutes and add habanero sauce
    - Take a baking pan and add the ranchero sauce in the bottom
    - Take the tortilla disc and the bean mixture, to which add onion leaves
    - Fill the disc with bean mixture and roll them. Keep them in the baking pan over the ranchero sauce.
    - Top it again with ranchero sauce. Add cheese slice ever the baking pan
    - Keep it in the oven for 10 minutes on 180 degrees

    Food is food. If it tastes good, that's all that should matter. All these people claiming that this isn't "authentic" are probably the same ones that eat at Taco Bell and love Chipotle. It's flattering to see someone from a different culture take an interest in someone else's, why bash him for that? It's prejudice and mean. Recipes are meant to be adjusted and tweaked. I'm Mexican and I make Indian food all the time, I'm sure I'm not following someone's grandma's recipe, but I love Indian food. This guy probably loves Mexican food too. Okay, now I'm just babbling, thank you for making this!

      Akhila Achuthan yes ! Normally enchiladas we filled with shredded chicken breast , chesse or ground beaf :)

      @Manya N. Mexican here. And there is a non spicy twin of enchiladas, they're called enfrijoladas. Instead of spicy sauce you can prepare a bean sauce, and stuff the tortilla with cheese, shredded chicken breast or scrambled eggs.

    I tried these enchiladas and they came out perfect..I added mushrooms with the beans too 😀...I loved this recipe.. simple and easy.. thank you so much..I had been craving enchiladas.. here in Canada I haven't found enchiladas anywhere, especially the way they make it in Indian restaurants like little Italy...this recipe was perfect and came out exactly the way I wanted.. thanks again..:)

    Imagine rolling tandoori bonless chincken in naan and smothering it with butter chicken curry covering with cheese and baking it.... wonder how yummy that would taste... Indian enchilada....

    Nice recipe but tough to get these ingredients here. Will surely try if I manage to get. The last tortilla isn't seem side down though.. Its to the side.. Hope the stuffing didn't fall out.

    I have now clue if it’s authentic or not authentic but it tastes really really good. I have been trying this recipe from last 2 years n everytime it’s jus wow super tangy n little spicy jus love it.

    I'd suggest trying fresh coriander in place of the basil. I think that would give it an even more of a Mexican taste.

    I made these awesome enchiladas last night. Everyone loved it at home.My only concern was that the baked bean turned out a bit dry. Any idea on how to get a bit watery consistency. The ranchero sauce turned out to be superb ☺

    Mexican person here with an Indian partner. This is a bit like when the British make chicken "Tikka masala". Not right however it's still food. I'm just not in for calling food exotic. India and Mexico have very similar cultures; pride in our food and a colonial past among so many other things. I know this must be delicious, so I'm eager to hear one day that you've tried a more authentic recipe. I bet it'll be even better :)

    I like to use a green chili enchilada sauce made with green tomatillos(not tomato). The sauce is so good I eat it with fresh vegetable, eggs, chips, anything.

    Mexican enchiladas are made with corn tortillas!! Also, instead of parsley use cilantro. Sauce looks awesome though! :D
