  • We still have a little stash of ripe tomatoes from the garden this year, and we've been really wanting to try to make some seasoned dried tomato chips in the freeze dryer. So why not take you guys along for the experiment! We'll try some with just salt, and some with everything but the bagel seasoning (you can learn how to make some here: • Everything But The Bag... ). They turned out awesome! In fact we're going to definitely make some more. And as for the puffball mushroom, we toss it all into our Vitamix blender and turned it into a powder. We'll try some recipes in the futures, adding it to soups / stews and see what it does.

    Make sure you do the tomatoes a really long time - you can't overdry something. The seeds in them don't get completely dry and it can cause an issue later. I add an extra 8 hours or so when I do tomatoes. I'm still a newbie, so I err on the side of caution!

    I haven't used a freeze dryer, but I wondered about drying two items with such different moisture levels. Those tomatoes may not be completely dried if they aren't crisp. Even with a regular dehydrator, tomatoes get crunchy when they are dry.

    We marinated and dehydrated our tomatoes this year to put onto sandwiches for school...no more soggy bread ;-) but we cut our tomatoes much thinner.

    Very nice unit! Looks like you have a lot of freeze drying in your future.

    I have been making tomato chips for a long time, but use our dehydrator. I season ours with oregano, garlic parm cheese nutritional yeast and salt.

    I use my powdered mushrooms to add that extra umami to soups, stews and sauces. So good!

    A tip I've learned is to use a moisture meter on things. they are used for baseboards when you have a leak in your house. You can get them on Amazon or at the hardware store.
    and if you can't be there right as the cycle ends the freeze dryer freezes the food. The problem with that is if the food is not finished it is cold to the touch when you snap a piece open or just touch it, but if the trays are frozen then the food is cold and there is no way to tell if it's fully dry.
    What I do is click more dry or dry more lol can't remember which, and let it run like 15 min then come back and cancel out the time so it shuts off.
    that will allow the trays to warm up and if the food on it is cold in places you know it's not finished yet.
    The tomatoes are always like Styrofoam unfortunately even when fully dry. 😭
    I personally only liked them as a powder or added to something I know im going to cook.

    I don’t have a freeze-dryer but have made crisp tomato chips in my dehydrator by slicing them more thinly and perhaps dehydrating them longer.

    Nice! My daughter gave me some freeze dried peaches. The texture throws me off lol. Green beans were pretty good. I wonder about potato chips? I was also looking for a good recipe/canning video for Bloody Mary’s if you have a video on that. I’d like adding olives, celery, carrots, pickled Cajun green beans, worstershire , maybe some okra, etc. A bartender once told me that was her secret to the best BMs I ever drank. I’d love to make some for gifts. Fun video! Thanks!

    Not sure if my garden is big enough to warrant a Freeze Dryer but it is very interesting watching all the trials going on with them at the moment, it appears it is the current trend in the USA. Cheers Denise- Australia

    That is my dream to get a freeze dryer we did sliced dehydrated tomato with herbs on it and some playing but the freeze dryer would be such a helpful tool here

    I dehydrated a ton of cherry tomatoes and can make into powder but when I made sauce and was to thin I added a few handfuls and it was perfect . A freeze dryer would be a amazing kitchen tool !

    Food shouldn't go above edge of trays and weight of each tray should be 2.5 lbs or less. Learn as you go. 😁 Just love thinly sliced cucumbers as chips!

    I sprinkle with Italian seasoning S/P and dehydrate mine for just eating like chips. Hopefully I’ll start freeze drying soon as our freeze dryer is on its way. Can’t wait. They are super yummy, super condensed flavor.

    Now that I have watched your video to the end, I am sure you are calculating all possible variables ... I recently tried freeze-dried, sliced apple and strawberries. I was surprised by the two different textures: the strawberries were delicately sliced and were tremendously crispy, while the thick-cut apples had a pleasant, but unusually soft texture.

    I really love the idea of making your own Tomato Chips, and make my own Pizza Seasoning, sprinkle that on the slices, topped with some Parmesan cheese and pop the trays in the dehydrator for 20-24 hrs. The are great as snacks, Pizza topping, salads, sandwiches

    I was wondering if when you sliced the tomatoes if you slice them thinner and prefreeze the slices, the skin would slip off and prevent the chewy texture. Also, have you considered turning the freeze dried tomatoes into a powder? I think that would be an amazing addition to just about anything (deviled eggs!)!

    Hello from Michigan!! I love my freeze dryer. It is going 24/7. Your face with the mushrooms was priceless, lol. Funny enough, my next batch is going to be mushrooms. But I plan to cook them how we like to eat them and then fd them. Planning on using them in camping omelet meals along with fd eggs, green peppers, onions and diced ham. One word of advice. Your tomatoes were not finished if they were soft. You can put them through another cycle. If you already have something else in the freeze dryer, put your tomatoes into your freezer until you can run them again. I am in south west Michigan and with the heat and humidity this summer, my runs have taken 40+ hours for most things, even though my machine is also in the basement. Regardless, I love it and wish you the best and most fun with your machine!!

      I've been looking and wishing for one too. The one I have my eye on is about $4000 😳
      But we love freeze dried fruits and for camping/hiking it would cut the cost way down on the easy to carry foods.

    Rachel, I do not have a freezer dryer, but I have made Tomato chips (and pepper chips and dehydrated zucchini, swiss chard and broccoli) in my dehydrator.
    Try dehydrating plum tomatoes and putting them in a jar with olive oil sauteed with herbs and garlic after it has cooled and storing them in the frig. I try to keep the tomatoes under the oil so they stay moist. I think they can stay for a couple weeks in the frig, but mine never last that long. Yumm!
    Also, these tomato chips are great on a sandwich or just snacking. I season some and leave others plain in case I need a quick paste or to add to casseroles or soups.
    I never thought of topping a salad, though, thanks.
    As for the swiss chard, I store them in a vacuum sealed mason jar and add them to soups, casseroles, or in my DIY powdered veggie cup o' soup.
    Dried zucchini is good when it comes out of the dehydrator, but it doesn't stay crispy if stored. I powder it and add 1-2 tablespoons of the powder along with other veggie powders for the above DIY cup o' soup (just add boiling water).
    Three things about drying tomatoes:
    1) tomato chips are crunchy in the regular dehydrator. If they are sticky or soft they have not dried completely.
    2) dehydrated foods need to be conditioned (I think that is what it is called, (watch the "Purposeful Pantry" on YT. She has wonderful tips for dehydrating food & storage.) To make sure there is no moisture left in the food. Basically, let it cool, put the dehydrated food in a glass jar and watch for 7 or more days to see if condensation develops in the jar or mold grows. If after the week or so, it is okay to vacuum seal the jar for long term storage.
    3) I personally do not like any of the freeze-dried foods I have tried, especially strawberries and watching while you ate the tomato slice it flashed the same mouth feel the FD strawberries gave me. Dried tomatoes have chew. A crispy start and as the moisture of your mouth marries with the tomato you get this infusion of tomato flavor and then a chew like a fruit roll up. Amazing
    Finally. I love watching your show. I'm learning a lot, but I'm still not ready to PC, but getting more confident to try WB again after my disastrous 28 half jelly jars of moldy peaches I made fir my Grandbaby a few years back. My first reentry into canning after a 20 year absence. So much work and then an epic fail.
    My son watched your cold river therapy with me and agrees with Todd. . . No Way!

    Excellent content, as always, Rachel and Todd. What I'm interested in knowing is why you chose freeze-dried, rather than dehydrated. Specifically: do freeze-dried tomato chips stay crisper than their dehydrated cohorts? I LOVE dehydrated tomato chips! Also, which method is greener and more sustainable? Apologies if I missed information about these things in this or other videos and comments, and I look forward to future reports.

    If there is any softness, you should add more dry time. Would be a shame to lose the whole batch because there is still moisture in there. I have a moisture meter to check all of out stuff as it comes out. Worth the investment.

    Trader Joe's has a wonderful mushroom seasoning blend that you might try to mimic/copycat with the mushrooms.
    Fun fact-your body cant really absorb any nutrients from raw mushrooms! I heard it from a food course I took. While some mushrooms are tasty and safe raw -the nutrients are locked up. They are basically just water lol but once cooked mushrooms have lots of good stuff.
    Also wild mushrooms can cause stomach issues raw too and should be cooked. Luckily puffballs can be eaten raw.
    Oh some also react poorly if you drink alcohol with them. My dad loved morels but he had to not drink with them as he would get very ill. So heads up!

    I kicked and smashed some mushrooms and later found out by watching your clip that they were puffer mushrooms. Went outside and found small good ones so I’m going to let it grow.

      Once they get to the point that puff clouds of "smoke" I smash them too. They are past the point of eating at that point, I feel like I'm helping to spread the spores around better for next year 😃

    That's not salt, it's the sugars from the tomatoes.
    Mushrooms are absolutely amazing rehydrated. I break mine up and add them to homemade cream of mushroom soup powder. Tastes so amazing and I know what is in it!!
    You can put a piece of parchment paper over the tomatoes and add another layer. It comes out amazing and the model you have is made to freeze dry more at a time. ❤️

    Wonderful possibilities with this machine, but the contents should be very crisp and you should not sense any softness in them - it would indicate there is still moisture in whatever you are working with. You might have overloaded the mushroom trays.

    Did the salt intensify after drying? I'm a little hesitant to add TOO much in case it does. I don't particularly care for mushrooms but my husband does, so I watched someone who did CANNED mushroom slices and they came out really nice. Rehydrated into pieces that apparently were just as nice as they were fresh. Since I just don't use them very often it doesn't make sense for me to buy fresh one, and that's sad because we live about 22 miles from J & M Mushroom Farm where you can buy sacks full of various varieties. I'm going to get some and try them since freeze drying them will be perfect for me! thanks for sharing

    We like to powder our freeze dried tomatoes also. You can make tomato paste in seconds or use as a thickener in soups, pasta, chilli and the list goes on.

    be careful when u eat dried food (like the one u prepared)...u must...must drink a lot of water...otherwise u will start having issues with the bowel movement.

    We live pretty close to you only west near the Indiana border, I think we are Zone 6A. Do you have a source of information for care and maintenance of a small orchard. We had a drought early this summer, but a lot of rain since. In town with large lot. Pear tree only set on one pair, but lots of apples and peached set. Apples are full of worms and peaches seemed to rot before ripening. Who or what would you recommend?

    I would think powdering the tomato chips from a freeze dryer will work better than a regular dehydrator....I can never get mine dry enough to fully powder...they seem to get gummy the longer I blend them. I would love a freeze dryer

      Freeze dryer costs more, but retains more nutrients and the food will last 20-25 years. Really depends on what you can afford. Freeze dyers can be pricey: affiliates.harvestright.com/1182.html

    Please be careful eating mushrooms you forage raw. They should be cooked. Otherwise you could get very sick.
