It seems like only fairly recently that eggnog has become known as a alcoholic beverage to the point that you need to Google non-alcoholic or virgin eggnog to find a good recipe.
Base recipes like this were widely available in the late eighteen hundreds so that you could add whatever alcohol you wanted. Or leave it without alcohol for pregnant women. This is also just before major Temperance movements in the United States
I will make this for Christmas eve. A few other people have posted the recipe, but there were some missing quantities for some of the ingredients. Here's the full recipe, based on what I can gather. 1895 Eggnog Recipe Ingredients: 5 Eggs 2 Cups Milk 1 Cup Heavy Cream 1 Cup Sugar, plus one pinch 1/2 tbsp Ground Cinnamon 4 Cloves 1 tsp Vanilla 1/4 tsp Nutmeg First, whisk the yolks of five eggs together with the sugar. In a stand mixer, beat egg whites with a pinch of sugar until peaks are stiff. Fold milk mixture and egg whites together, adding nutmeg and vanilla. Refrigerate for 2-3 hours before serving.

Back then (if it’s mentioned in the book you have) hot egg nog was referred to a “Tom & Jerry.” I know because my grandmother in San Francisco would make it fresh from scratch every holiday season. She would separate the egg yolks from the egg whites and whip them up separately. To the creamed egg yolks she would add powdered sugar. To the egg whites she would add a teaspoon or less of “cream of Tartar.” Then she would fold gently the egg yolks into the egg whites into a large bowl that was especially made for “Tom & Jerry’s” then she would ladle a dollop of the batter into especially made cups for “Tom & Jerry’s” and then pour fresh hot milk into each, sprinkling a very small bit of nutmeg and cinnamon on top. It was so delicious and creamy. Warm & comforting on a chilly winter night. Of course there was also some sort of liquor included for the grown ups like whiskey, brandy or bourbon. But for the kids it was a little bit of vanilla or almond extract. According to my grandma, hot egg nog was served at Christmas in winter and cold egg nog was served at Easter in spring. But that was a long time ago. Yes! Fresh homemade egg nog is always better than store bought. And if you use high quality, farm fresh, organic free range eggs and organic grass-fed cows milk then you will have some awesomely delicious egg nog. Thanks for posting
So. Was homemade better? You weren't clear. Jokes aside, if you have an immersion circulator (the sous-vide stick heater thing) you can pasteurise your eggies before you whisk them into peaks, thus getting both fluffy nog _and_ no risk of naughty naughty baccili.
You can also buy pasteurized eggs ,in both whole and just the whites, at the grocery store. When my father was dying his immune system was compromised by one of his medications, so when I made royal icing for gingerbread I bought pasteurized egg whites because we could not risk it. Worked great! You can even find it at wall-mart.

Depending on your culture, or who you learned the recipe from, you add whiskey or high proof rum to the raw egg to kill all the bacteria before you mix it all together. It's practical, not just for the booze.

Back then (if it’s mentioned in the book you have) hot egg nog was referred to a “Tom & Jerry.” I know because my grandmother in San Francisco would make it fresh from scratch every holiday season. She would separate the egg yolks from the egg whites and whip them up separately. To the creamed egg yolks she would add powdered sugar. To the egg whites she would add a teaspoon or less of “cream of Tartar.” Then she would fold gently the egg yolks into the egg whites into a large bowl that was especially made for “Tom & Jerry’s” then she would ladle a dollop of the batter into especially made cups for “Tom & Jerry’s” and then pour fresh hot milk into each, sprinkling a very small bit of nutmeg and cinnamon on top. It was so delicious and creamy. Warm & comforting on a chilly winter night. Of course there was also some sort of liquor included for the grown ups like whiskey, brandy or bourbon. But for the kids it was a little bit of vanilla or almond extract. According to my grandma, hot egg nog was served at Christmas in winter and cold egg nog was served at Easter in spring. But that was a long time ago. Yes! Fresh homemade egg nog is always better than store bought. And if you use high quality, farm fresh, organic free range eggs and organic grass-fed cows milk then you will have some awesomely delicious egg nog. Thanks for posting

Jokes aside, if you have an immersion circulator (the sous-vide stick heater thing) you can pasteurise your eggies before you whisk them into peaks, thus getting both fluffy nog _and_ no risk of naughty naughty baccili.

You can also buy pasteurized eggs ,in both whole and just the whites, at the grocery store. When my father was dying his immune system was compromised by one of his medications, so when I made royal icing for gingerbread I bought pasteurized egg whites because we could not risk it. Worked great! You can even find it at wall-mart.
@@laurelmcf1 pasteurized eggs are not widely available anymore. I found that out the hard way whenever I was pregnant with my first daughter 4 years ago.
You can actually pasteurize your eggs without an immersion circulator, though it’s more difficult

Depending on your culture, or who you learned the recipe from, you add whiskey or high proof rum to the raw egg to kill all the bacteria before you mix it all together. It's practical, not just for the booze.
