The engineer in me right away thinks of many improvements that could be made, but what a fantastic unit!
It’s a bit of a disgrace though that you have literally 6 pellet units on a trailer and still use a charcoal Weber kettle to “finish it off” or what ever was going on there.. 🤣🤣🤣

Shows how much you know about competition barbecue. One of the techniques used by world champions is searing the bottom and top of the rib for 30 seconds each to finish it off to really tack up the glaze…. No disgrace whatsoever, using world championship techniques.
