Can you name a type of fungus that is important in the diet of humans? I bet most of you thought mushrooms. However there is a fungus that is arguably more common in human food. Any ideas what it is? In this video we are going to look at anaerobic respiration by yeast, and how it can be harnessed to produce food.

If yeast cells go through anaerobic respiration, why do they still have mitochondria?
When extracellular glucose is exhausted, yeast cells undergo a highly regulated transition from fermentative to respiratory metabolism, where mitochondria plays an important role. This article gives a good insight: www.pnas.org/content/117/13/7524
