Strider Hiryu desintegrates himself because that was his death animation in his games. I've played both the Mega Drive and CPS1 versions of Strider, as well as Strider 2. I don't know if he does this in the 2014 game.

These bombs monitor their life signals, and if a Strider dies while on a mission, their bodies disintegrate so that no evidence of the Strider is left behind. Or something like that.
Hiryu was adopted from the onslaught on the Tribe he lived on (In the videogame, Hiryu is stated to be descendant of the Tungusic tribes in Asia), and raised to be a ninja.
