Here's a tip, when you add the acini de pepe the first night its fine. But then leftovers....the pasta swells, gets really big and soaks up the broth and gets mushy. To avoid that, cook the pasta separately, then rinse in cold water. Store it in the fridge. When you heat up a bowl of left over soup, add the pasta to your bowl and then pour the soup over it. The soup will instantly heat up the pasta but it will keep its small size and shape and you don't end up with veggie stew the next day-it stays a soup. :)
I just made this soup and ate it for a week and also froze 4 containers of 2 servings each. I'm 73yrs old and live alone so I enjoy hugh pots of soup so I don't have to cook everyday. Enjoy your soup, I definitely did!

Step 1: always season and braise your beef in hot olive oil or butter before adding to stew or soup. Braising enhances the texture and flavor markedly of the beef! Have a blessed day! Aldi has organic broth at that Swanson price.

Exactly, the olive oil adds a touch of richness and depth and I also sauté tiny diced onion with the beef.

I agree I use a whole beef roast sear off and cook in crockpot overnight then shred up and put it and the beef juices back into the soup.
I add beef shank bones, and a seared beef roast (then shred it) onions, carrots, celery, fresh garlic. If I have no pastina, I will use Orzo.
1 pound hamburger seasoned and browned with half an onion chopped then drained
Keep meat in pot then add
1 bag of frozen veg
1 32 oz beef broth
1 15 ounce can tomato sauce OR one single serving bottle of V8
1 can cubed potatoes
Add a bit of water if needed a cup at a time if you need more liquid as it evaporates
6 ounces Orzo pasta
Bring to boil then bring down to simmer stirring occasionally until pasta is done.

I like to use hamburger in mine and sometimes I will use a beef roast and cut it up in cubes.

In reading the comments, it seems there’s as many ways to make vegetable soup as there are the number of people who make it. I found some really great ideas.
Try adding a little fresh cabbage the last 20 minutes of cook time...really adds a nice sweetness and a little texture to any vegatable soup.
I have a recipe which my family loves - Carbonnard de boeuf. Toss you beef in seasoned flour. Fry onions, 2 large, in butter with salt. When softened, remove from pan and add beef and brown. Pile into slow cooker, deglaze your pan with a can of beer and add to slow cooker with rich beef stock. Cook then for 4 hours on high and you should have a rich thick sauce. I serve with mash and green vegetables. Also, Danno, you are pouring stock down the drain. If you skim the scum, place your colander over a bowl and add bullion cubes to it, you've got beef stock. Just another cost cutter.
EXACTLY, he’s throwing beef broth down the sink, which I totally don’t get. I use better than bouillon to add flavour to my broth. I luckily have my own canned tomato juice, and tomatoes. A 64 Oz bottle of V8 in central Kentucky is 7.71, which is a huge expense IMO. ❤️

I used can carrots, green beans and corn and keystone beef meat to my vegetable soup. I made some yesterday.
You can always get a chuck roast when they are 3.99 a pound and cut it into chunks. They are usually about 3 pounds so you split it in half and freeze what’s left
So important for everyone to have at least a few favorite recipes that make a ton of food and are delicious to heat up for leftovers. Cook once, eat many times, even freeze leftovers if there are any. Great way to save money.
And if a friend or neighbor needs a meal for whatever reason, it's so wonderful to put a few servings worth of soup in a jar and drop it off at their front door.
I use peas, carrots, onions, barley, potatoes, chicken broth, stewed tomatoes ( home canned). Spices
"Acini de pepe" and "pastina" are almost the same. Pastina is smaller, they also call the little stars,("stelline") "Pastina", which only means "Little pasta". As you can see from the long spaghetti, the Italians have a name of EVERY little difference, which is why there is "Spaghetti", "Spagatini", "Vermicelli", etc. on shelves.There are different names for the different spirals. In Italian, the different-sized shells have different names.
I have stored a lot of 'Pastina' and 'Steline; and "Angelhair" pastas because they cook so quickly and if we have to find alternate cooking sources, they cook much faster.

Soup looks good! Appreciate the low cost food option. That’s something that you can freeze the leftovers and eat later.
Also I used can of peas, diced tomatoes and broth to my vegetable soup i made yesterday in my crock pot.
Looks delicious. I would also add a few mini chopped potatoes and/or a can of diced tomatoes vs tomato sauce. For those that prefer, add some Tabasco into your bowl once served. I love a homemade soup.
Sounds good! I made Brunswick stew about a week ago and put some in the freezer.
Vegetable soup sounds so good. I like to add carrots celery onions and some cabbage to mine and potatoes instead of the pasta. Sometimes I’ll also toss in some rutabaga and canned tomatoes are a must. Now I have to make this soup. It’s such a comfort food for me. Also if you braise your meat it will give it color and add so much more flavor versus boiling the meat.
That sounds like the way I make mine. With carrots, celery, cabbage and potatoes added. I make a huge vat of the stuff and can it. I eat on it for a couple of years. I live alone so I can in pints. I can easily get 40 pints from a HUGE pot. Cook once and eat for years. I love veggie beef soup.
Veggie soup without cabbage is like a day without sunshine!
Ham bone with 2 cups cubed ham, whole onion, 1 stalk celery, 2 cans tomato sauce, 1 can diced tomatoes boil 30 min, then add 1 cup corn, 1 cup butter peas, 1/2 cup elbow macaroni...cook till noodles are done, add 1 cup diced potatoes, 1 cup cut okra....simmer for about 45 min....yum good

I use 2 cans of vegall 1 can of diced tomatoes 1 pound ground beef and season with soy sauce washyoursister sauce 1 bay leaf garlic powder onion powder dash of sugar and squirt of ketchup

Thanks for introducing me to acini di pepe, Danno! We have far fewer choices for pasta everywhere here in Florida. Not many Italians like up in the North.
I saute fresh carrots, celery & onions in butter first then add beef or chicken brother. We also like to ue ground beef. Then add the already frozen or canned vegetables. Hubby likes potatoes in it also.
I love to make soups and chili with the cooler weather! That's what I call comfort food!

Hi Danno. Love, love those little noodles. Cooked those for my kids & grandkids when they were little. Topped them with butter, kids loved them. I still cooked them like that for myself at 78, so good. Thanks .

The great thing about vegetable soup is that every time it's made, it's always just a little bit difficult. Depends on what you have in your cabinets and freezer. Plus, it's always better the second day.

I toss it all in a pot, say a prayer and walk away. I use spaghetti sauce(hunts) meat flavored..I don't like V8 anything. If you have left over spaghetti with meat sauce, it is a great starter for this kind of soup also. You can also make soup from a left over roasted chicken dinner or roasted beef dinner. Soup is a great money saver. Just have fun with it. Thanks Danno.
I use beef bouillon cubes, hunts tomatoe sauce and one can of stewed tomatoes. I also use mixed vegetables. I'm sure yours was great!!
I do the same.I cook the diced tomatoes while I'm browning the meat. I like them soft. Old gold from Indiana are my favorite budget canned tomatoes.
I love vegetable soup, V8 juice makes it so much better..
I have never tried the little pasta but I will be on the hunt for it. The soup looks so good!

I like your recipe, very similar to mind except I like to cutup potatoes add carrots and put those in with the rest of the vegetables. You can also substitute stew beef for oxtails.
That little pasta is the same one they put in the canned Italian wedding soup with the tiny meatballs. My mother in law always put a plate of pizza rustica on the table instead. To be added to taste. A flat egg grated cheese baked pizza cake cut in tiny cube/croutons.
I love the idea of adding the pasta to the soup. I usually use a leftover beef roast for my veggie beef soup. I cook my roast in au jus mix instead of beef broth. It seems to be more flavorful. I use potatoes, carrots, petite diced tomatoes, tomato sauce, green beans, and corn. There is usually some leftover broth, celery and onion from my roast that I toss in. Add an extra packet of au jus mix and more water depending on how much broth I want/need. I think I'll try the pasta instead of potatoes next time. Thanks for sharing your recipe.

Parsley is a superfood and will also add a 'green' flavor.
Vegetarian Vegetable soup does great with the addition of Bokchoy or some green cabbage.

Homemade soup is the way to go. It tastes better and is better for you. No preservatives!
Nice soup! I have to look and see if we've gotten the Acine Dr Pepper back in stock. I haven't seen them in a long time. I like to add some little bits of carrots and celery. I use a large can of crushed tomatoes, some stock and some water.
Hi Danno and Jess, I buy chuck roast instead of many curs of beef. Chuck roast is frequently on sale here at $4.99 a pound. It works wonderfully in soups, stews, stir fry and of course hot roast beef sandwiches. Have a wonderful week 😁

The ABC noodles are hard to find and I'll give that pasta a try for my veggie soup! I don't like celery either but as long it is very finely chopped or whole stalks cooked/be removed later would be the way to go. Looks so good! I buy roast meat and portion it out.

So many ways to make veggie soup, we saute the beef & onions before adding beef broth, I do not add lots of tomato products now because it raises my husbands blood sugar, green beans, dehydrated mushroom & celery powder adds depth, we dont add pasta due to it being keto but if you add a tablespoon of oilve oil before your pasta it wont stick to your pot.
I'm sure it's excellent soup, but wow, it's the most expensive "cheap" soup I've seen. A much cheaper version could be made with beef bones, beef bullion cubes, fresh carrots, celery, onions and potatoes, plus whatever veggies you have on hand. Also canned tomatoes & your own seasonings.
looks good but I start with canned sirloin, I buy my beef local grass fed and can half of it in case freezer goes out, shred the meat and add diced carrots, onions, and celery and cook it until the onion is trasparent, add green beans, potatoes, spanish corn, t0mato sauce, rotel and water, cook for 20 minutes and add peas and cook 20 more

I cook my meat in a fry pan with olive oil, salt and pepper it. Remove and add onions, garlic and celery and cook a few minutes. Remove and heat the pan up, use a little juice to clean the bits off the bottom of the pan and add contents into my stock pot. Add the onions, garlic, celery, bay leaves, veggies, homemade tomatoes/juice, and beef bouillon. Let simmer on low, an hour, then add the meat back into the pot, simmer or leave on warm. Salt and pepper to taste.

Enjoyed your cooking demo. I like top sirloin roast..bought on sale. I brown it first then slow cook in the crock pot. Shred it and dice into bite size pieces.

Looks great! 10 or 12 servings for $28 seems really pricey. I buy Progresso soups on sale from 97 cent to $1.50 each and eat the entire can as a meal. Thank you for sharing your recipe.

The soup lppks delicious ! I was eating bowl of vegetable soup that my neighbor brought me. It was so good! It had just a little "kick" to it. I had just about decided on Cheeseburger Soup, so it will wait until another day.

That is not cheap, that is expensive! Don't use stew meat, use ground beef! Not the really fatty one, but maybe 80-85%. Don't use canned broth, you don't need it, just add water. Use a small can of tomato paste, not that expensive V-8. (Of course, you should be making and canning your own "V-8", anyway.) Use fresh carrots, celery, potatoes and they make the broth when you cook it. Make it more nutritious by using dried beans and leaving out the pasta. Use salt, pepper, garlic and whatever else you might spice things with to taste.
This is called " Hamburger Soup", I use a big recipe of this and can it up by the canner load in quart jars.

People really have to look into the Knorr powdered broths. I use a red party cup filled with warm water and adjust to my taste. You get so much more than just buying a can of broth.

I love beef vegetable soup. I love beef and barley. I love oxtail/barley soup but oxtails are insanely priced anymore. I prefer to use beef shortribs, but again, the price. I save beef (and chicken)scraps to make beef broth, separately.

Hi Danno and Jess! Have you ever used potatoes in your soup instead of the pasta? It is awesome and you can take a couple potatoes out mash them then put them back in to your soup to make it thicker more like a stew. Also try cornbread instead of Italian bread it’s awesome. Just some different ways to make/eat your soup. Thank you so much for sharing the recipe.
Tarragon is delicious in vegetable soup. Tried just a pinch of it over 30 years ago as an experiment. So good!
You could add frozen diced potatoes too
Acini de pepe has been my favorite soup pasta since I was a kid. I prefer it over Orzo.

Here’s maybe a stupid question … why do you cook the meat, then throw out the broth you’ve cooked it in? You would not need the beef broth if you just kept the broth you cooked the beef in. You threw all the broth and nutrients from the beef down the drain. All beef broth is water that beef has been cooked in with salt. Just saying you could save a few bucks not buying beef broth if you used it.

You don't add carrots?
Char your aromatics, sear your protein, and toast your spices. It'll help open up more deeper flavor.
Unless you want clear broth for things like Ramen/Pho, reserve the rendered fat from cooking protein. It also add flavor (I try to limit seed oil in my diet).
If your family don't like the ribs/stalks of vegetables like broccoli, cauliflower, kale, etc, why not make veggie stock out of them? You'll be surprised by the natural sweetness imparted by the vegetables too.
