Roll the boiled egg across the counter with gentle pressure and the shell basically falls off. So, just enough pressure that you can hear it crackling as you roll it.
I'll have to give that a shot because I've been making deviled eggs for decades. I found the best way is to place eggs into boiling water and boil for 10 minutes. They peel easily. Every time I start with cold water they are hard to peel so your method will be interesting

I usually just put them in ice water for about 5 minutes and it works wonders.

Steam over boiling water to 13 minutes. Never have a problem
Another tip is never try to boiled eggs that you’ve just bought. Eggs need to have been in your frig for at least two or three days.
