Next time I make samp I will try this. Looks good. Also, instead of using aromat to compliment stew lamb/beef. Add cinnamon, nutmeg, some vanilla extract and a natural sweetener will make for a nice breakfast.

It depends on the type of samp. Quick cooking samp doesn't need to be soaked. Regular samp soaks overnight to soften it before cooking (just like beans), otherwise it will take hours to cook soft.
