Brown sugar, maple syrup, corn syrup, palm sugar or honey (honey has antibacterial properties though, so even though it's recommend, I'm not entirely sure this is the best option). Unrefined, tightly packed brown sugar would work best 👍

oh dear........not sure why i did it....its not my first time........but i put the molasses in same time as i added the milk :( I wonder what the result will be. dammit
ok so i added the molasses at the wrong time. what has happened is that i have had a clear separation of the curds and whey in just over 48 hours. i am assuming i can continue with the process and be assured it has worked correctly. i am not sure about adding more molasses! the curds are molasses colored!. any comments welcome. thanks

flour at the bottom is pure starch. Don’t remove it
