In the uk w have a lot of ish and chip shops, some of the pictures of fish on the logo have mouths like that I wonder if they found one and thought it was smiling and then it just stuck
I've never heard of tiger trout before and I've caught a few species in Canada many years ago, including Dolly Varden in the Kicking Horse river. Which state are you in? I'm in Thailand so I won't be able to join you unfortunately!

Using flies on spinning gear is called spinfly, and here it's practiced a lot, there even is specific flies for it
