    I have a jig tree still in a 5gallon bucket,that I got as a gift. In Montana the winters are too cold for this tree. It has a lot of figs on it this year. So, excited to try your preserve recipe.

    Can I leave out the lemon. I used to do figs many years ago ago and I didn’t think nor my 90 year old mother that I’m keeping remember putting lemon in it . And I don’t remember her nor grandmother doing a water bath and they had figs for years on the shelf. Just asking. I have 27 cups and it’s 9 pm so I’m glad I watched ur video, cause I m gonna can them in the morning.lol

      Mama didn''t put lemon in hers She didnt water bath either. They kept until we ate them all. I am not advocating you go against the government "rules"..just telling you what mama did.

    Do you know, I have been using maybe two tablespoons of sugar and letting the the figs sit in the frig over night. I cooked them a couple of hours and they are very sweet. Yummie, and the family loves them.

      oreosmama48 it is easy. Just watch the color and occasionally put a dab of the Sur up out to cool. If it gets thick n syrupy it’s ready😀😀❤️

    Figs, mangoes and passionfruit are my favourite fruits over everything else. I do love strawberries, blueberries and bananas too but mangoes are my top, followed by passionfruit and then figs. I love them fresh, dried and done in the frypan with butter and brown sugar with ice cream. Michelle

    First time I ever had a fresh fig was at my Daughters house in Louisiana. We made fig jelly but it was green not red they said it depends on what kind of figs your growing. I made some with strawberries delicious

    How long do you water bath the figs for? My fig bush is producing this year and I'm getting ready to make fig preserves. My grandma and mom used water bath method and I haven't in years past but since I have so many figured it's be better to do it that way.

I wish I had had the presence of mind to record their recipes for fig preserves, homemade biscuits, and even their breading for pan-fried fish... I was born in the late sixties and I took it all for granted... And I now I miss not only them but their cooking... And so, your content is greatly appreciated...

    Great vid just what I needed easy peasy, I like to keep it old school reason being because our ancestors didn't have nor do all the fancy new stuff and their food never spoiled.

      I am so glad you let me know!!!!! It's easy....just take time....( then exercise to burn the calories you consume having to get another spoon full!!!!) lol Do look up my fig cake recipe on here. It is delicious!!!! It was one of my first ones.... family favorite.

      @@ApronstringsGayJordan My single fig tree is really fruiting this year. I just started a 6.5 lb. batch of fig for preserves. I am usually able to keep up with it by eating them and giving away the rest, but I just couldn't so either cook them up OR leave them on the tree for the birds which seems like a waste.

      Properly canned....several years. ....but, you have to decide what you feel comfortable with. The recommended time is always much less than The actual time they will keep.... I think....

    I was bored so I thought I would find a video of yours I have not watched, aren't you lucky to have fig trees by you and she even cleans them for you, great looking figs, I would die for a batch of fresh figs. Hot, hot here and I see you are still getting the heat, you stay cool in that air cond. and I will keep half filling water bottles and freezing them, add water and rub all over my face and pretend I have air cond.

      Alas...my friend that every year gave me figs, sold her home and moved. SIGH....And the other one....they decided to chop theirs down because they didn't like the leave everywhere n the fall. WHAT????? I nearly died. I would have tried to cut it back way small and transplant it. I was sick. They had mentioned it....and I told them I would rake the yard. I thought they were over it and were gonna leave it. It was ten feet across...... I couldn't believe it! It takes years to get a tree that big. I am so sorry for you and this heat! I remember as a kid when we didn't have ac....it was miserable t get ready to go anywhere in the evening...just so stinkin' hot! Maybe we will have as unusually cool fall as we have had a hot summer!!!! Take care of you!!!!! Ya gotta stay healthy so you can come see me!!!!

      I don't have a official time frame, but, i have used some 8 years old. It may be a little darker and thicker, but.....still yummy As long as the seal is good....my opinion is...the food is good.

      It’s always best to water bath. On occasion if I only have enough for 1 or 2 jars I don’t water bath. Because we’ll eat them quickly....But to water bath is insurance of a good seal. My recommendation is always water bath

      Please be careful. Figs are a low acid fruit and require an acid like lemon juice or citric acid and require a water bath. Keep refrigerated or freeze if not water bathing. Our grannymas didn't know about botulism which is deadly. Here's a great link for new canners.

      I have never used a water bath for fig preserves. I also use less sugar since figs are already so sweet. Mine always seal. I use citric acid, but have done it without any added acid. I’m reading all this and worries me, now, lol.

    Thinly sliced lemons 🍋 are ESSENTIAL when making fig preserves. Perfect color.

    what does water bath mean?

      Water bath is a method of canning where the jars sit on a rack in a pot of boiling water for a designated time to insure a good seal. Not all things can be water bathed....some must be pressure canned! Have a great day!

    Inversion canning is no longer considered a safe method. Your process for cooking is great but you need to water bath or put in fridge if you’re not. I know you’ve probably done it that way for 50 years but it’s not safe! Please revise this and don’t teach others this unsafe method. So sad.

      Lisa Whitfield if I had lots of figs, I’d have water bathed. I did say we’d eat these quickly and will be making another cake. Listen again. After the last bit was jarred I talked about this. That being said....I appreciate you watching! 😀

      N Glass why because she made a video that implies she knows what she’s doing? Inversion canning hasn’t been around for 50 years. It isn’t safe and she’s guilty of negligence posting unsafe canning practices that COULD make people sick.
      Just because someone says they’ve never had a problem doesn’t mean there won’t be a first time. And guess what? Science has improved home canning so it can be done safely. If someone ignores that and doesn’t want to learn safe methods then that is sheer ignorance and being willfully stubborn. I have certification in master food preservation and I DO know what I’m doing.

      No matter whether you intend to eat this in a fairly short time or not, this is not a method that I would put out into the world for new canners to see. There may be people who don't know how dangerous it could be. Filling the jars half full is also questionable.
