It depends on the greenhouse and how well it retains heat. But I'm fine leaving seedlings out in the mid to high 30's inside the greenhouse especially if it's been sunny. I'll pull seedlings inside if it's in the 20's

I have two Green Stalks and I love to have my herbs in them. Last year celery and bush green beans did well in the Greenstalk too. I also have planted dwarf sunflowers alternating with tabasco peppers in the top tiers and they brought me so much joy throughout the summer.
Cotyledons are the starter leaves of a seedling, though I've also heard another term I can't seem to find reference for (so it is likely a mispronunciation of "cotyleon"). I think the cauliflower bolting looks lovely. Roman Chamomile is perennial. We likewise have not seen our asparagus peeking out yet, but also our daffodils were late bloomers this year, so maybe last year was just an anomoly for us. LOL (And I had to cheer when you unboxed your GreenStalk because now we're "twinsies" hahaha) Since you're already planning tiny romatoes in the new GreenStalk, maybe a layer of flowers (like dwarf zinnia or marigold), and a layer of lavender (if you can get it to grow - I've always had a bit of trouble with growing that from seed)...
I bought a lavender start last year from a friend who sells plants. She got this particular variety that was developed to grow in the humidity here. It died when we moved, but I'm planning on getting another one. It had grow far better than the normal lavender I'd also gotten.

Love seeing the goatie goats, of course! I second the idea of maybe planting some flowers, or even herbal plants you can use as teas maybe later, in your new blue greenstalk. I bought a bonfire peach too this year, but I saw reviews online after I got home with it that said they weren't a very good fresh eating variety, that they were mostly ornamental. Mildly disappointed, but we shall see.
I would suggest herbs to the leaf greenstalk. does rosemary over winter for you ? perhaps garlic chives, parsley, summer savory, and any other you use often as they are a great height to constantly take small amounts for the daily meals. things like thyme or even Nasturtiums trailing out would look nice too.
Wow, your parsnips look wonderful. I am hoping my seeds will germinate. My last Planting of parsnips did not. Any suggestions would be greatly appreciated. Love your videos
Do you happen to have frost fabric? I have birds, cotton tails and red squirrels that all love my seedlings and the only way to sprout anything outside I have found is under frost fabric. the animals leave it be and side bonus of best germination for some too. the frost fabric I just lay on the soil to cover it until I see a bunch of green showing through. also prevents drying out and my favorite way to start carrots.

Mine isn't heated and SOMETIMES winter is too cold even for Brassicas! This winter was pretty mild though!

How about some different mints in the greenstalk. That should keep them contained.
In trying to avoid perennial things so it can be used variably. We do have mints around our house and we love them there!

Those would do best here over the fall and winter and I'll definitely be doing that in this planter during that time! ♥
I have to use bird netting on my gardens, it's a hassle, but necessary. I use row covers for my brassicas.
The birds thankfully are a temporary issue. Usually a second planting survives fine!

White peaches are amazing cooked into jams or pies and canned!! The cooking brings out the sweetness :)

I do but the winds make it really hard to maintain. Eventually the birds get bored but this is typical of the first sacrificial plants I put out!
