Spanish were one of my favorite eating fish when I lived in VA. I'd marinate the filets in soy sauce, sriracha, garlic paste, honey, and sesame oil and smoke or pan sear them. So damn good. Smoked is great on bagels, in dips, by itself.
The perfect day to be out on the jetty.. I like seafood all of it red line and all some times I cook them whole or cut them in half Some people have too many levels of fishy taste issues maybe they should stick will the fish sticks..

But I personally like Spanish, I would rate it exactly where you did. Most of the ones I've caught fought hard too. Fun to catch, good to eat! Thanks so much for the great video!
I love the spans. Caught a few when I was at packery in October on those slanted slab spoons and in cut Mullet. I liked the taste even better than red fish, especially when mudline was cut out and fish were bled. Now stuck in Canuckistan for the next how many years.😢
My buddy makes fish dip exclusively outta Spanish....and it tastes great. Thats what Bearded Brad and Angler up with Brant outta Pensacola do. Theyve got awesone channels like yours. Grear video again Coop. Still waiting on your vudeo on the north side of 361 at the Packery...where those people are set up with set rods in waist deep water. Also wondered what they're after. Would love to see you try your luck there.
They are fishing for what bites, but usually Reds, Trout, Flounder, Drum. The channel is deeper; they are throwin into it. One day, I saw like 12 boats almost tied to each other in the channel, probably flounder that day
I've only had Spanish Mackerel once... I used to catch tons of them down by Doctor's Pass in Naples. My wife thought they tasted too fishy, but I thought it was better than the Grouper we cooked with it. If you don't like fish to taste a little "fishy" maybe you should eat chicken instead lol.
i love atlantic mackerel, i just score it and season it lightly and stick it in the air fryer, the fat and oils in the skin and meat fry the fish in the air fryer, i bet this would be the same result as spanish mackerel, they dont have near the amount of fat and oil as atlantic mackerel, i have broiled them in the oven and they have came out crispy and delicious wouldnt doubt the same if not better in the air fryer. p.s do it outside unless u wann stank up the house lol.
Those Spanish macks are alot better if you bleed them and get them on ice as soon as they come out of the water
