I eat that toast EVERY day- it is easy, filling but not too heavy for the morning. I use Ezekiel bread which takes some getting used to as it is uber healthy- but with the nooch on top it makes it taste much better :)
I like to top my avocado toast with everything but the bagel seasoning and sliced tomatoes. For hummus toast, I make a carrot topping. Saute some chopped onions in olive oil about 5 minutes. Add oregano, cumin, smoked or sweet paprika, pepper. Cook a minute. Add shredded carrots cook about 5 minutes. Add chopped fresh parsley or cilantro if that's to your taste. If I have feta or goat cheese I'll sprinkle over the carrot topping. And of course I top this also with sliced peppered tomatoes. I'm not a salt user generally but feel free to use. If I grate 2 carrots on the smaller size I use 1/4 tsp. of the herbs or 1/2 tsp. if I use a larger amount of carrots.
@catsvegankitchen3390 If you use a little sweetener & a squeeze of lemon or lime in the carrot mix, it's a great salad on its own. The French add some Dijon mustard to it. To make it a meal, you could add chickpeas to it.
I’ve been making nutritional yeast salad dressing (1c of yeast in the recipe) and use it on everything including roasted veggies instead of butter. I also make the same recipe but with less water so that it’s quite thick and can be used like mayo. Even my red neck husband loves it. That was the most surprising thing of all. Lol
