Twice baked with that recipe would be perfection adding butter & sour cream to the potato mash. Gruyere on top instead of cheddar in the middle. Then broil...

Have you ever tried the smash method? I heard a tip once and I tried it. When they come out of the oven grab them one at a time throw them down on the table. They come out very fluffy inside and very easily come away from the skin when you open them. I love your tip to open the potatoes. It's much better than cutting with a knife. Thanks!

I made these last night with scallops instead of shrimp, I added mushrooms, sweet peppers and onions and Omgggg it was soooooo good. My family kept raving about how good it was and that they’ve never ate an entire potato before.
I have done similar but i take about 3/4 of the potato out and mix it with the seafood and cheese and then spoon it back in, that way it mixes better and when you get to the skin it still has flavor from the seafood when you eat it. but still a great recipe!

Once they're out of the oven and still piping hot you pick them up throw them hard onto the counter or cutting board before you open them. The potato releases easily from the skin when you cut them open. The best thing is you get all of the potato rather than having a lot of it stick to the skin.
This was the bomb. This was my first night trying it for our family…. I put a little extra Parmesan cheese because I doubled the recipe. I will definitely do this again.
