    ・4 chicken wings

    ・1 shimeji mushroom, 2 king oyster mushrooms, chestnuts 400g, 3 green yuzu
    ・4 eggs, 1 bag of udon, 1 bunch of pasta (100g)
    ・Garlic
    ・5 shiso leaves (shiso leaves will last longer if you soak the stems in water)

    ・Salt, pepper
    ・Soy sauce
    ・Mirin
    ・Vinegar
    ・Miso
    ・Granulated soup stock
    ・White soup stock
    ・Mentsuyu
    ・Ponzu sauce

    【Monday】
    ●Saury with garlic and mushrooms
    Fillet the saury into three pieces and cut into bite-sized pieces.
    Sprinkle with salt and bake in a preheated oven at 200 degrees for 10 minutes.
    Fry the chopped garlic and chili pepper in olive oil.
    Add the shimeji mushrooms, king oyster mushrooms, and grilled pacific saury and stir fry.
    Add 1 teaspoon of soy sauce.
    ●Roasted Chestnut and Walnut Salad
    Stir fry the chestnuts and walnuts in olive oil.
    Season with salt and pepper.
    Place the chestnuts and walnuts on top of the salad greens and pour the oil used in frying over them to finish.

    ●Mushroom Salad
    Stir fry the shimeji mushrooms and king oyster mushrooms in olive oil.
    Add 1/2 teaspoon of soy sauce.
    Place the stir-fried mushrooms on top of the salad greens.
    Sprinkle on grated cheese.
    Pour on a mixture of 2 teaspoons of olive oil, salt, and pepper.
    ●Yuzu and Mentaiko Bukkake Udon
    Boil the udon.
    When it's done, cool it in water and drain it.
    Cut the mentaiko lengthwise and peel off the thin skin with the back of a knife.
    Wipe off the pesticides from the green yuzu skin. Add water to the baking soda and mix well.
    Add the green yuzu and wash the skin.
    Put water in a bowl and crack an egg into it.
    Cover loosely with plastic wrap and heat in a 500W microwave for 1 minute.
    Place the mentaiko and egg on top of the udon noodles and grate the green yuzu skin.
    Cut the green yuzu in half and squeeze out the juice. Remove the seeds.
    Pour the noodle soup over the top and it's done.
