Ingredients for Oven Baked Khachapuri
Makes 1 12 inch khachapuri
For the filling
1.3 pounds/600g grated Imeruli or Sulguni cheese or 14oz/400g grated mozzarella and 7oz/ 200g crumbled feta
1 large egg white
For the dough
3/4 cup/200g plain, full-fat yogurt
1 teaspoon soda
1 large egg yolk
1/4 teaspoon salt
1 teaspoon sugar
7 tablespoons/100g unsalted butter, softened
1 ¾ to 2 cups/all-purpose flour (300 to 340g), sifted, plus more for kneading and dusting
1 large egg yolk, beaten with 1 teaspoon water to make an egg wash

I had the opportunity to go to Georgia with the military and visit for the night. I just wanted to say that a group of us had ONE of these at the restaurant and ordered 6 more pies to go. Thank you for this recipe. When my Grandmother was sick with Parkinson's, her nurse, who was from Georgia, made this bread for her almost everyday. It was delicious. I went to georgia 🇬🇪 for new years and Christmas to visit my Partners Family I never seen so much food in my life on 1 table as I did at the many Supra we attended!!! Hi I am making this khachapuri when I have guests. It’s also keeps great refrigerated. Just microwave for 15 seconds. You can half the recipe or there’s another Imeruli khachapuri made on top of a stove on Tamadas Table.

Wow! This looks amazing and simple enough for my lack of baking skills to make. I do have a question: is Georgian cheese not usually available in the States, and do you think other cheeses, like a French cheese, can work well?
Hi I usually use the combo of mozzarella and cows feta which is most approximate to Georgian cheese sulguni. Sulguni is available in some stores in the USA, but not everywhere.

Gamarjoba Tamada! Do you recommend using this yogurt based dough or a yeast dough for Kubdari? I learnt to make khachapuri with a yeast-flour-water-salt dough and I made that yesterday! I was thinking of using the same dough for kubdari tomorrow.
Yeast dough for kubdari, which needs stronger dough to hold the meat filling. This yogurt dough is too tender for kubdari. Thank you for your question.
