Golden Stew from the Black Sea | Iakhni Beef Stew
This stew of beef, walnuts, and spices hails from the Black Sea coast, once known as Kolchis in ancient times, a region linked with the legendary Golden Fleece. Perhaps inspired by this myth, Georgian cooks incorporate larger proportions of marigold (kviteli kvavili or Imeretian saffron as it is referred to in Georgia), lending a beautiful golden hue to the stew. Alternatively, it could be the abundant sunshine of the subtropical climate in Adjara that influenced the stew's vibrant color.
Any beef for stew would work well, yet do not use lean meet. The stew benefits from the richer, fattier parts of the beef to achieve the best flavor. For this purpose, I suggest using chuck, brisket, or short ribs. Traditionally, the classic stew doesn't include cilantro, but I find that adding it enhances the dish with its piquant flavor, complementing the taste of walnuts, spices, garlic, and chili pepper.
Ingredients for the Iakhni Beef Stew
2 1/2 pounds stewing beef (preferably brisket), cut into 2-inch cubes
black pepper
2 medium onions, chopped
3 tablespoons unsalted butter
2 cups water
For the walnut paste: 1 1/2 cups walnuts, halves with pieces; 3 or 4 garlic cloves; 1 teaspoon coarse salt; 1/4 teaspoon crushed red pepper or cayenne, more to taste; 1 cup water
1 cup beef broth
1 tablespoon ground marigold
1 teaspoon ground coriander seed
1 teaspoon ground blue fenugreek
1 cup finely chopped cilantro (optional)

I spent a month in Georgia. They have the most awesome cuisine! Incredible country, such friendly people. I cooked your badrijani recipe a few times. I'd like to share an anecdote: I almost became a delicious dish myself, because I was camping outside (nearby Mtskheta) and found myself surrounded with chacals at night! People told me, they do not do anything, they are "like little kids"... After eating some khinkali, I got encouraged and now, thanks to that, I am brave and some kind of Popeye who can camp anywhere. Still, I recommend people to get a proper hotel since Georgia has a vibrant nature that might surprise you.

The spices are marigold ( kviteli kvavili), blue fenugreek ( utskho Suneli), dried ground coriander. Please see the Georgian names of the spices in brackets to find them online.

I don't know what blue fenugreek is, I've googled it and couldn't find anything either all the results are the regular fenugreek Can i use less amount of regular fenugreek to replace the blue one

Utskho Suneli or blue fenugreek is available on Amazon, I just sent you a link for information purposes. If you don’t have blue fenugreek, just omit it but don’t substitute with fenugreek as it’s different taste.

Around 500-550g but you may need more or less depending on the flour type. Best way is to start with less and gradually add flour.
