First of all LOVE! LOVE LOVE! Elena ! Why does this story remind me so much of Anthony Bourdain? As a former food service employee I know low wages, long hours with little respect for us as people. His model for the future of food service and employees ? Che Fico is expensive for an evening out but for special occasions ? Its one of the BEST in San Francisco !!

This place has gone way upscale and is now unaffordable unless you're in tech/doctor/lawyer. Hope their business model works out because I'm glad their workers are compensated well and their food is good.
Now this is what it means to be a progressive that cares about the excellence of work and the quality of work.
