✔INGREDIENTS:
2 medium aubergines (700g)
Water + Salt
3 eggs
Salt and pepper
1 Tablespoon of mustard
Sweet paprika
Breadcrumbs 150g
Flour 2 large spoons
Fry oil

Oh my goodness does this ever make me hungry! I've fried eggplant, cut in similar fashion and dredged in egg mixture followed by breadcrumbs, with a cold sip of sour cream with horseradish. My boys loved it but this recipe is complete in and of itself. Will make for my Father and I! He's 94 and deserves more of an effort from me when it comes to cooking for us. Thank you!

From Mumbai India. Very interesting way of cooking the brinjal or eggplant. I HV tried it twice. We also make a fried version curin rounds and batter is made with chickpea flour byt we don't blabche the slices
