Poles are famous for complaining about everything, including their country. But what we have in common is the fact of appreciating delicious traditional Polish food. I highly recommend going where the locals eat. Most of the places in the center are created for tourists, where it may be tasty, but it's still not like smaller places that have a soul. There is also a list of regional products that have special certificates, and this also needs to be experienced. Polish cuisine varies greatly depending on the part of the country. In my neighborhood (Kraków) we eat significantly different dishes than at the seaside.

You got yourself in some tourist traps xD If I can recommend something try Polana Snaków and Elixir by Dom Wódki. Tatar is very traditional for us and we like to test the kitchen with it. From things you didn't try that is our staple would be: "nóżki", "śledzie", "ogórki kiszone". But many commentators are right. The best of the best is in regional capitals and not in Warsaw. There you can find great international food. Great ribs at Aruba. Oh! And "pączki" at Plac Wilsona!

The traditional zapiekanka is made without the tomato sauce. It is all about cheese and mushrooms so it not really like pizza

Zapiekanka and pizza are two completely different things.
Zapiekanka can mean casserole or open baguette sandwich.
Pizza is just Pizza. Same in English and Polish.

I'd travel to Poland but i already live here, so i don't have to, and yes the food here's amazing and people should try it.
also random thing but i just love laughing at people trying to pronounce Polish words, example Kiełbasa being said with an L instead of an Ł, wich for someone born in Poland can be pretty hilliarious

It always amazes me in such culinary guides that people only go to purely tourist places. I'm taught that if you want to taste a given country, go where the natives eat. "Tourist" restaurants are focused on pure customer exploitation, minimum costs, maximum price and nice presentation. You don't have to try because you don't fight for a customer who is supposed to come back to you, the customer is for one time (additionally, I usually don't know how it should taste). I'm not saying it's bad food, but the maximum you'll get there is average. The only thing that surprises me more is tourists in mc donalds.
