    there are about as many recipes for those cookies as there are households who have them as a staple. - The way i do them is quite similar, yet a little different. So, for anyone feeling like experimenting:
    - two more flavours, same amount: 100% cocoa powder and ground ginger (also a pinch of salt ought to be in every cake or cookie dough).
    - heavy cream instead of butter.
    - heat the spices up together with the honey, then add the rest - eggs last so they dont scramble.
    - use rye flour (up to 70% of the total flour used)
    - use wet hands to roll the dough-balls - it can get very sticky otherwise.
    - lemon-and-sugar-glaze instead of powedered sugar

      Very similar in my household. Only differences are that we use white pepper instead of black, and no cocoa powder. And when making the glaze, we use milk instead of water (and no lemon juice) to give them a nice shine

    Pro Tip to make them moist and edible, because they are hard as a rock after baking.
    Slice an apple and half-dry the slices in the oven.
    Add them on a piece of parchment paper in the box you keep the cookies and they will absorbe the moisture emitting from the half-dried apple slices.
    Take care they do not mold by adding lemon juice on the slices before and after baking.
    Not only will the peppernuts be soft, they will also absorb the aromas from the apple, which makes them extra nice.

    AMAZING recipe!!! I made Pfeffernusse years ago with a complicated recipe and burned out a hand mixer - I swore I'd never make them again. Then I saw your recipe - it was so easy to make and they turned out perfectly! I used a measured disher scoop and they were consistent in size and they baked beautifully.... taste just like my German grandmother used to make. Thank you, Anna for this recipe. It's definitely a winner and a welcomed addition to my cookbook

    Oh my gosh! My mom used to buy these as a kid, I’m not German and I had no idea what they were, just that they were delicious and my childhood cookie. I can never find them anymore. Thank you for this recipe!

    This almost exactly my great grandma's recipe. We just don't use any sugar, just (more) honey. They're the best cookie for the holidays. ❤. Great to come across your video.

    Just made a batch of these and they turned out just like you described, a delicious cookie bursting with flavor and wonderful texture ! Thank you for this fantastic recipe! Will be serving for Christmas if I can keep my husband from eating them all….Thinking they will last awhile and get better with age. These were my dad’s favorite also, so making them in honor of him.     Excellent, excellent recipe. Simple directions and as long as you can use measuring spoons it is basically foolproof (and believe me, if I can make these, the recipe MUST be foolproof). Great texture and flavor. Wonderful for Thanksgiving, Christmas or anytime! Thanks Anna!

    In the netherlands we have something very similar called pepernoten (same meaning) but also something more spicy called kruidnoten, which are delicious.

    When I made mine I used Chinese 5 spice and a lemon glaze instead of powdered sugar, but I'm definitely going to try this recipe =)

    When you said black pepper I didn't bat an eyelash, lol. The first pumpkin pie I made from scratch last year called for, you guessed it. Black pepper!! Its crazy. I can NOT stand to eat black licorice but fennel and anise? Not a problem, 🤷‍♀️...

    Anna - I love your recipes! I haven't tried this one yet, but have been making several others including your choc chip cookies. I have a question about them. They came out perfectly the first time I made them, but the next few times they have not been spreading and flattening when I bake them. Any idea what I might be doing wrong?

    Hello Anna I had just discovered you (and it was a beautiful accident on the ion Chanel) I am totally in love with your stile. I look you up I the food network and here, I’m so glad I found you! Question out of the 6 spices I can’t make the name of two of them, I can understand the basic ones (I think) pepper,cinnamon, allspices, but the other two I can’t.     Hey Anna, I'm not a huge fan of overly sweet desserts so can I reduce the sugar in all your dessert recipes? Would the baked goods still be good?

      Yes yes yes. My great grandmother's recipe doesn't contain ANY sugar.
      1 cup honey
      1 egg lightly beaten
      3 tbsp shortening
      3 cups sifted flour
      3/4 tsp each:
      Allspice
      Mace
      Cardamom
      Baking soda
      Baking powder
      Salt
      1/4 tsp black pepper
      1/8 tsp anise
      Warm the honey and shortening together in a sauce pan
      Pour egg and honey mixture into the dry ingredients
      Mix with a spoon
      Rest the dough 10 mins
      Roll into 1 inch balls
      Bake at 325 for 13 mins
      Rest cookies overnight
      Toss with powdered sugar in the morning

      For sure! Traditionally, the dough is actually supposed to sit for a few days or even weeks. This helps mature the flavour of the spices. Just keep it covered in the fridge (not the freezer) and save adding the egg until you are ready to bake it

    Anna, is it true you should spoon your flour into the measuring cup since that is more accurate?

      I know this is an old question, but thought I'd reply anyway; the reason some people say to do this is because if your flour has settled or compacted in the bag or bin, there will actually be too much flour in your measuring cup. Recipes always assumes "aerated" flour. Back in our grandmothers' day, it was common to sift your flour before measuring - not to get out lumps as much as to aerate it before measuring. The easiest way to ensure your flour is properly aerated in the measuring cup without all that spooning nonsense, is to use your measuring cup to scoop some flour up and sprinkle it back into the bag/bin. Do this one or two times to fluff up the flour, THEN scoop into it to measure. Always make sure you scoop a nice generous amount, and level it off with a knife or your finger. Easy peasy. Just remember, home bakers across Canada and the USA have been using the spoon\cup system for at least three or four generations to make millions of delicious recipes. Its not fussy or complicated! ;)

    Have a slightly different recipe, but this one sounds good as well. I dislike powdered sugar (way too messy) so glaze them instead.
