Add them on a piece of parchment paper in the box you keep the cookies and they will absorbe the moisture emitting from the half-dried apple slices. Take care they do not mold by adding lemon juice on the slices before and after baking. Not only will the peppernuts be soft, they will also absorb the aromas from the apple, which makes them extra nice.

Then I saw your recipe - it was so easy to make and they turned out perfectly! I used a measured disher scoop and they were consistent in size and they baked beautifully.... taste just like my German grandmother used to make. Thank you, Anna for this recipe. It's definitely a winner and a welcomed addition to my cookbook

My great grandmother's recipe doesn't contain ANY sugar. 1 cup honey 1 egg lightly beaten 3 tbsp shortening 3 cups sifted flour 3/4 tsp each: Allspice Mace Cardamom Baking soda Baking powder Salt 1/4 tsp black pepper 1/8 tsp anise Warm the honey and shortening together in a sauce pan Pour egg and honey mixture into the dry ingredients Mix with a spoon Rest the dough 10 mins Roll into 1 inch balls Bake at 325 for 13 mins Rest cookies overnight Toss with powdered sugar in the morning
For sure! Traditionally, the dough is actually supposed to sit for a few days or even weeks. This helps mature the flavour of the spices. Just keep it covered in the fridge (not the freezer) and save adding the egg until you are ready to bake it
I know this is an old question, but thought I'd reply anyway; the reason some people say to do this is because if your flour has settled or compacted in the bag or bin, there will actually be too much flour in your measuring cup. Recipes always assumes "aerated" flour. Back in our grandmothers' day, it was common to sift your flour before measuring - not to get out lumps as much as to aerate it before measuring. The easiest way to ensure your flour is properly aerated in the measuring cup without all that spooning nonsense, is to use your measuring cup to scoop some flour up and sprinkle it back into the bag/bin. Do this one or two times to fluff up the flour, THEN scoop into it to measure. Always make sure you scoop a nice generous amount, and level it off with a knife or your finger. Easy peasy. Just remember, home bakers across Canada and the USA have been using the spoon\cup system for at least three or four generations to make millions of delicious recipes. Its not fussy or complicated! ;)

Hey Anna, I'm not a huge fan of overly sweet desserts so can I reduce the sugar in all your dessert recipes? Would the baked goods still be good?
