    I made this ganache and it was so good! I almost didn’t want to share my macarons. It was my first time trying the pastry cream technique and I would definitely try other recipes

      Thanks so much for trying it! I’m so happy you liked it! Many of my videos have the macaron shell recipe in the description box, and all of my ebooks have my basic macaron shell recipe at the beginning of the book as well!

      Thanks for watching! Yep it’s just regular cream - the same as whipping cream or heavy cream!

    Hey,Maddie. Can you recommend some whipping cream brands in your opinion which are good quality ? I'm moving to USA from Europe next month and I'm trying to figure out which brands of products are best for baking. Thank you in advance

      Usually I just use whatever local brand looks best or whatever is available in my local grocery stores! I don’t really have a specific preference for baking :)

      I probably would not recommend that, but I haven’t tried it so it’s up to you if you want to experiment with it!

    Hi Maddie, can I substitute caramelized chocolate with white chocolate? Will that lessen the caramel flavor?

    Is it possible to use this same ganache for chocolate filling?

      It is up to you, but personally I would not. This ganache has a ratio of butter that is meant for a filling for a macaron or cookie, so I would personally not use it in chocolates

    Can I reduce the butter to 50 or 40 grams instead of 80 grams? Because I don't like its taste, and I'm afraid that if I change the ingredients, the consistency of the ganache will change

      You can experiment with it if you want, but I’m not sure what the results will be :)

    Do you need to use a stainless steel pan for caramel?
    I only have nonstick pans and my caramel never comes out...🤨

      I'm not sure, I never really pay attention to the pans I'm using for caramel! If it isn't working, my first guess would be that there is some oil or residue in your pan or with one of the other tools you are using, but I suppose the pan itself could be the problem.
