Usually I just use whatever local brand looks best or whatever is available in my local grocery stores! I don’t really have a specific preference for baking :)
It is up to you, but personally I would not. This ganache has a ratio of butter that is meant for a filling for a macaron or cookie, so I would personally not use it in chocolates
Can I reduce the butter to 50 or 40 grams instead of 80 grams? Because I don't like its taste, and I'm afraid that if I change the ingredients, the consistency of the ganache will change
I'm not sure, I never really pay attention to the pans I'm using for caramel! If it isn't working, my first guess would be that there is some oil or residue in your pan or with one of the other tools you are using, but I suppose the pan itself could be the problem.

I probably would not recommend that, but I haven’t tried it so it’s up to you if you want to experiment with it!

I only have nonstick pans and my caramel never comes out...🤨
