Nice! I hope you love it! It's great for meal prep! To reheat the leftovers, add the portion you'd like to a saucepan with some extra plant milk. Heat on medium high heat until warmed through and it will be super creamy again. I typically add a little more salt because the extra plant milk dilutes the flavor slightly. ut just a pinch or two is perfect! Hope you enjoy! 😊😊

@@NikkiVegan I made this for dinner on Friday night and it was delicious! Only thing I did differently was I used some red lentil and quinoa based noodles rather than plain noodles which just added to the flavor!

It looks delicious! I would like to try it with frozen then thawed tofu. I’m not a fan of the soft tofu texture. Definitely trying this recipe. I don’t have a Trader Joe so I will use what is available to me. Should still turn out taste. Using plant based milk instead of water with the cashew sauce is a great idea, I imagine it makes it next level creamier.

I have an allergy to cashews (and pistachios and mango, funnily enough), but I always see creamy sauces using soaked cashews. I was wondering if you know of another way to get the same consistency in a vegan sauce that doesn't use cashews. I can eat other nuts, but I'm not sure if another nut would replicate the creamy-ness. I love your videos, you make such delicious looking food!

Thank you! Don't use vinegar because it sour the dish. Opt for low sodium veggie broth instead 😊 It will taste a little different but it will still be tasty! Hope you enjoy!

Oooo that could be a good idea! Let me know how it goes! White beans would be another, but both will require a little salt to taste. You could also use tahini but opt for one that is very light and runny for best results....idk exactly how much....maybe 1/4 cup? 🤔

Hey Kelly! Soaked raw sunflower seeds or un-soaked hemp seeds will work as well! You could also try very light colored, runny tahini instead 😊😊 I haven't tested with these ingredients so I don't know what the exact measurements would be for each substitution but all of these options would make a creamy sauce and only change the flavor slightly...more nutty tasting ironically but still tasty! Hope you enjoy!
