dueling coasters if it's going to be between two themed areas perhaps a clash of themes? If it's between scifi and pirates perhaps a pirates vs aliens battle or something.
For something to fill in the space, you could do some sort of magic time-travelling forest or something. You walk in one side during the pirate era and come out the other in the far future (or vice versa).
I know this video is older (I'm behind. Sorry!) But I LOVED those pots you put around the fountain. Such a lovely pop of colour. Pirate theme is a very drab colour palette and I just loved seeing some nice bright colours. This comment is mostly pointless but I just wanted to appreciate your eye to detail.
Idea: A transition ride/area that is part fantasy and part pirate, e.g. Peter Pan, some obvious buccaneer elements but go heavy on the fantasy theming.
You could just make the theme of the dueling coaster an old ruined temple that pirates are using to store and hide away treasure. Just a like a very overgrown forest with rope bridges, tree forts, temple ruins, waterfalls, and cliff tunnels that the hybrids can race through.

The back of the water feature of the restaurant looked like the beginning of a cave. I know I'm still behind a bit (though a few days ago I was 5 months behind, now only 3 weeks) but maybe you can make a waterfall of it? I think it'd be a really cool little feature for the restaurant.
An idea for the theme around the dueling coasters could be the Royal navy vs Pirates. Maybe have a royal Navy station, very proper and regal, going over water with ships battling, further into a jungle area with overhanging arches made with terraforming. Or the coasters could go through a shipwreck area where a massive battle has occurred, sort of ghost-like and dead, a little spooky. Edit: Oh, or the coasters could go through this ancient jungle temple, that would be cool. Sort of like a lost civilization on the caribbean isles, could also be themed sort of spooky and haunted.
The restaurant looks gorgeous! For the dueling coaster you could maybe do Pirates vs. Navy. Another possibility would be a darker, grungier pirate theme, similar to Blackbeard and his ship in the fourth Pirates of the Caribbean movie. I can't wait to see what Frontier will present at E3. Probably not something spooky/Halloween yet, but that could be the first paid DLC? I am hoping for a water coaster for the summer update.
sometimes it can be useful to grab an animatronic when you are trying to build to scale. e.g:if you temporarily placed an animatronic next to the seating you'd know everything's to exact scale!
All I wish for is Planet Safari to be honest, but I agree it's probably way too early for it. So I'm going to hope for horror theme stuff for fall for now. :D

Hey Jonti btw love your vids by far my favorite planet coaster UA-camr but I think that you shouldn't do a castle as a weenie because I feel like that is like just a complete deviation from Disney you should make a weenie that is very unique and different, just a thought
