That is such a great technique for coating the chicken instead of a batter. It makes it crispier and those craggley bits really hold the sauce. I double-fry mine to keep it super crispy. Thank you

Long story short... A homeless man had a chicken but no stove to cook on, so he he came up with an idea. He killed the chicken, covered it in mud and baked it on a fire. The Emperor at the time walked passed and could smell the wonderful aroma. They he proceeded to sit down and dine with the beggar. Enjoyed it so much he then added to the list of dishes served in the Imperial Court. It’s quite truly quite amazing!
daniel trang I have so many questions. When was this? Stoves really haven’t been around that long in the sense of history. Why would a homeless man have a stove, anyway? He had a fire, pretty common to cook any food over a fire. If he was homeless why did he have a live chicken, or a knife to prep the chicken? Why did he cover it in bacteria laden mud? Why not just spit roast it? I don’t think a mud burned freshly slaughtered fired chicken sounds very aromatic.
@@chasenip2 Not electric stoves- stoves can we’re made with clay or stone and weren’t always available for everyone. It’s not mud, it’s clay. It is a very common way of cooking food. Furthermore, the chicken is usually wrapped in some type of leaf such as lotus or banana and then covered in clay and baked- the bacteria is cooked off in the fire. Living in the “wild” or just in nature is very common in East/South East Asia, you’re probably confused because this resourceful way of living isn’t common anymore.

I generally use vegetable oil or rice bran oil for all my Asian cooking :-) But any neutral-flavoured oil with a high smoke point is good to use.
