I’ve complimented you before on this recipe. Have made the cinnamon rolls three times by hand - perfect! Today used the dough cycle in my zojirushi bread machine. Actually wasn’t in the room when the dough finished, but it was still perfect! This time I made the filling with 1/2cup of brown sugar instead of white. Both are delicious! Your recipe is the favorite in this house. Thank YOU! Wish you could have had one with us.

You are Great! Kevin I’ve been a Home Baker since Junior High which then went into High School Home economics Class. I have a 3” binder with all the pare recipes that our Teacher passed out everyday. And one of them was Cinnamon rolls, now I believe things like this recipe might change a little bit from adding Walnuts or pecans, but you can’t replace the good ole gooey original recipe like yours! 😊Yummy so I just had to make some for my family. Hubba & (3) adult kids plus in-laws. I ended up doubling the recipe and made 2 sheet pan size Rolls. You are a great teacher and I've learned a lot from you from just the first couple of videos! Let me return the favor regarding the homemade vanilla extract. I get kind of OCD when I research new things like making vanilla extract (esp. since the beans are so expensive), and learned from more than a couple of sources that it is important to make sure the vanilla beans are submerged under the alcohol otherwise any exposed parts can become slimy or moldy and potentially ruin your extract. When I learned this and did not want to add more alcohol (which would have diluted the vanilla flavor) I just cut the beans in half.

I use your Japanese Bread roll recipe adding a dash of mace, a dash of fresh nutmeg a d a dash of vanilla to make my cinnamon roll dough. It’s fabulous!

You didn't proof the yeast. Did you use Rapid Rise Yeast? All I had in the house was Rapid Rise. Apparently I needed to use 1-3/4 tsp of Rapid Rise if the recipe alls for standard dry yeast, so I did that. At 90 mins in warm place, dough was almost double. I formed the rolls and they are at second rise before baking. Have you experienced making with both types of yeast? I love, love the dough and loved slamming and kneeding. 5 mins went by so quickly. Soon they will be baked and I'm expecting to make this recipe again and again!
