  • Our Sugar Cured Hickory Smoked Black Forest Ham is great for slicing as a sandwich or leave whole for the main meal. Sweeter, not saltier with a Black Forest coating of spices on the outside for added great flavor and appearance. Great for family get-togethers or have it shipped cross-country to loved ones far away. Average weight is 5 lbs, will feed about 18 adults with no leftovers. Hermann Wurst Haus is located in historic, downtown Hermann, Missouri.

    Black forest ham is a protected graphical indication and guess what? If its not from the black forest it is not black forest ham!
    This is not even black forest-styled ham because
    1. Hickory doesn't grow in the black forest and hence isn't used for smoking
    2. Black forest ham is dry-cured (raw)
    3. Who puts sugar on his ham?

    In Germany it is considered a crime to wrongly label origin protected food. Your ham has NOTHING to do with Schwarzwälder Schinken..... It even looks like you used leftover meat and glued it together with "meat glue enzyme":( It's a shame as some people will believe this video shows them how to make a Schwarzwälder Schinken Style ham.....

      I'm native American(a bit of german too) and I'm not flipping out because scones have nothing to do with bannock🤣 neither do I flip out when I see famous chefs seasoning their buffalo with all these different things lmao. Its just food, my guy.

      You are bashing the creator of this video because of what? This man is using pork. Schwarzwälder schinken is also pork, is it not?
      It may not be the same traditional recipe style but its still food.
      Also I am pretty sure this creator isn't in Germany, so why get mad?
      Since we're talking about ham, I'd really love to try traditional schwarzwälder schinken.

      ​@@buddyguy2943 Black forrest ham is a cured and cold-smoked RAW ham with a pronounced fat layer. it looks like a very dark bacon. Whatever this is, it might be tasty, but it's not black forrest ham. That would be like saying, an echilada is a taco. It just isn't.

      Exactly! The whole process is wrong! The pig is probably not even fed properly! Generation's of my family come from Berlin..but meine Urgroßeltern had a Hunting Cabin in the Schwarzer Wald area. The closest ham to come to the Black Forest Ham is Parma di Prosciutto

      @@kevinsmith6oh6 nope as a native from the blackforest i can confirm you that this video got nothing to do with blackforest ham. There is a protected recepie in how it is made and anything other then this exact recepie can not be called blackforest ham. Blackforest ham does not contain Suger and you can only use one special kind of wood to smoke it... And thats not hickory.. you have to smoke it cold and it takes up to 6 months to make.

    We've been making them here in U.K for over 200 years. Suffolk black ham. Cured in salt and herbs for 3 days, then marinaded for 6 weeks in a mixture of molasses, dark brown sugar, half a keg of porter/guiness, and then smoked for 3 days.

      This is Missouri-style Black Forest Ham. Hickory is a common wood in Missouri.

    I am from Baden-Würtenberg Region of Germany! Swartzwalder Schinken/Black Forest Ham is NOT made like this. It does NOT HAVE sugar or Maple or is Hickory, Maple, Apple Mesquite or other Hard wood smoked! You MUST use the Fir Tree! The ham is salted cured for week's..then cold smoked with a mixture of green pine twigs, sawdust and other secret ingredient's. In 1997, the European Union registered the “Black Forest ham” as a PGI (protected geographic indication). What you just made is NOT Black Forest Ham..it does not even come close! And Blackforest Ham is ALWAY'S paper thin sliced. A Schwarzwälder Schinken take's Up to 6+ month's to fully cure.

      It depend's on the State/Country in Europe as to whether they want to sell their product in the U.S. In addition, the USDA/FDA has their say in what allowed on the U.S. Market place. For instance, in the EU... Gummy Bear's must be made with Sugar and Fruit Juices for taste and coloring. In the U.S. market place, Gummy Bear's can be manufactured using cheap sugar such as HFC syrup, Additive's like Food Dye's for color and artificial flavor's. Bread in Germany must only contain grains, sugar, yeast, salt and water. Nut's and Seed's can also be added. No chemical additives to extend shelf life. Most European's buy bread every other day...rather unlike U.S. citizen's who buy pre-sliced, pre-packed bread that is highly refined, chemically and artificially added ingredient's that are added to prolong longevity and enhance taste and nutrition.
      As for Schinken...most european countries use Fir or Beechwood and recipes older than the United State's. Same with Cheese...I cannot get Brie de Meaux here in the United State's because the USDA/FDA say's I can't because it's a raw cheese. However, in Europe that cheese has graced many tables, including mine as a child, as a staple since the 8th Century.

      @@SuckMyJohnson Some you can get. But, especially meat and dairy product's it's hard to get. I have seen on Amazon that you can get Iberian Ham's from Spain...but they cost $300-$1000... depending on the Farm.

    Greetings from the blackforest... What you did here got nothing to do with our blackforest ham! It's not even similar and it even looks completely different. Please don't call your what ever it is black forest ham cause it isn't... Oh and that white and blue cloth you are having there... Thats bavarian... (Completely different area of Germany) we don't have this white and blue thing in the blackforest... Please notice that the original blackforest ham Name and recipe are protected. If you are selling this thing using the name blackforest ham you can be sued for missleading your clients.. or for just wrongly using a protected name.
