Before my intro.. a bit about this video: Today you will see me canning pork shoulder which can be used for pulled pork, tacos, enchiladas and more. Turned out fantastic btw, already had a jar with BBQ sauce, with cole slaw on the side.

I just got a great deal on pork that I'm gonna do this to!
I recently started canning meat. I was utterly blown away by the amount of meat that fits into a single jar. An entire 25 dollar roast in one jar with room to spare.
Mind blowing indeed. But it still feels good.
@@AnIttyBittyHomestead Yes it sure does. It would feel even better if it was for us to eat. That one was expired meat from a grocery store that gives expired food to farms rather than tossing it.
It does feel great to know my dogs will eat well though.

Do you render the pork fat down for lard?
I do render it, but first I freeze it until I have a sufficient amount.

Thank you for your great video... I have not tried to can pork yet... but definitely thinking about it now. I am not sure how you use it later, but I am still learning at age 75... all alone now, but thinking of future food shortages and getting ready.
I use mine to make pulled pork sandwiches, add it to my spaghetti sauce, saute with onions add eggs and make an omelet.

Local Kroger had Pork Shoulder for 59 cents a pound last night.
I picked up 40 lbs.
Just checkin' out how other folks can theirs.

Nice job. I did 20lbs of pork butt a couple of weeks ago, so glad to have meats on the shelf. Keep up the good work.
I have hurd that meet doesn't come out very good some say that chicken is stringy and hamburger meat turns gray is that true or are people telling lies just wanted to know
I haven't had either of those things happen. I've been canning meat for years.
Idk if i did right but i cooked mine in a crock pot with chicken broth then cleaned the fat from the meat and let broth sit in frig to remove the top layer of grease then warmed it and canned the meat with the broth. Hope it comes out ok for I never have canned pork roast before.

That was a perfect canning pork session! I still deal with syphoning but I’ve only canned about 5 times, lol
When pressure canning you don’t have to sterilize your jars jut wash them in hot soapy water and rinse well. When water bath canning you absolutely have to sterilize jars and lids !

New information is you do NOT have to sterilize your jars for either WB or PC if your process time is 10” or more
I think everyone has had some problems with weight gain! I was stunned to see ten extra pounds!!😩
