When you were freeze drying them you set the temp to do candy mode, but then didn't turn the candy mode on when you started - so it took like 12+ hours, but if you had just done candy mode would have been much quicker. like 3-5 depending on how long you wanted to do them.

My biggest hesitation on the freeze dryer is the noise. We don’t have a basement and our house is only 1300SF, I feel like you would hear it in every room.
I have a Harvest Right medium FD. I don't think it is any louder than a window air conditioner. We set ours up in our front room and seldom notice it beyond that room.

Our top candies freeze dried…sour skittles, caramel, fruit roll ups, peach gummy circles, and gummy sharks. Every 4-5 load is candy for the grandkids.

They are kept very dry and we don’t have much humidity so we don’t do anything special
You should try the Big Hunk candy. Very good. Freeze the bar and then break it into pieces the freeze dry. Very good.

Why does the candy need to be frozen first, though? I would think that simply heating it to that temperature under vacuum would be enough?
That is just what the machine does on its own. It automatically freezes it then what’s it up with a ton of pressure.
