- This delicious seedy pumpkin artisan bread is the perfect addition to your fall meals! This savory bread is wonderful as toast, as a sandwich, or a fancy grilled cheese!

Ingredients:
3 cups bread flour
1.5 cups warm water
1 3/4 tsp salt
1/2 tsp yeast
1/4 cup pumpkin puree (not pie filling)
2-4 Tbsp of salted roasted pumpkin seeds, ground (I used a coffee grinder to get a fine powder)
Directions:
-Combine dry ingredients in large bowl and whisk together until very well mixed.
-Add warm water and pumpkin puree and mix until all flour is incorporated and you have a shaggy dough. No need to knead ;)
-Cover and let rise for 12-14 hours (I do over night, mix before bed and bake in the morning)
-Stretch and fold 3-4 times
-Cover and rise 30 minutes.
-While waiting on your last rise, preheat oven and dutch oven to 450 degrees Fahrenheit
-Generously flour hot pot and then plop in dough.
-Cover and bake for 30 minutes
-Remove lid and bake for an addition 5-15 minutes until desired crust color has been achieved.
-Cool on wire rack & enjoy!
