- In this video I show setting the the pig trap and then catching four perfect eating size pigs. I showed some of the cleaning , deboning and show how I season the pork.After grinding all the seasoned meat , we cooked some patties and tasted to make sure we had the right amount of seasoning before we put it all in the casing. It was so delicious. I then show making all the sausage and preparing it for the freezer .Look forward to cooking the sausage in gumbo's, barbecue and pot roasting.

I pig hunt a good bit here in Texas. I usually do mine Hawaiian style with a pineapple brine to start with. I spent about 8 years stationed in Hawaii off and on while I was in the military. I ordered some of your KFRED seasoning and it arrived yesterday. I cant wait to try it. Your cooking sure looks good.
I’d be interested in seeing the entire process of dressing the hog, what you throw away and what you keep. Also during the deboning, what are the parts you throw away. I’m a city folk wanting to learn the fun stuff country folks do.

Love watching your video’s! Reminds me when I was young and Dad and us kids would butcher a domestic hog that would always be over 400 lbs. My Dad would make regular sausage, liver sausage “my favorite “ Also he would make hog head cheese and pantas. Bacon too. He would wait until a cold clear front would blow in.

I am an old lady in a highrise in a large city. When I see how you all live down south there I am amazed at how much food is available for you to hunt fish and trap. I doubt if you will ever go really hungry with all those hogs to hunt. There isnt anything to hunt here lol.

Great video Kendall. This cool weather has those pigs in high gear. I hunt and trap but i gotta tell you, you make it look easy all by yourself. I will catch, clean and make sausage by myself but only if i have to. Great job!
Now on a little different note, I haven't fished sac a lait since the spring at the Bend. The last video I saw of you fishing was in the lower basin. Point me in the right direction.I don't want your private spot, just the right landing. I will go from there. 😊

Alright kendall its time to step up that sausage making game bro. Lose the crank on that stuffer and drop the coin to get the motor and foot peddle. I make probably close to 600lbs of different sausages a yr and trust me it makes it so much easier when stuffing. I make alot of different deer sausages as well. Just finished making my new sausage smoker.. come on deer season.

@@mariomoso1059 I actually have a cook book I have been keeping and adding to for yrs of family recipes and ones i have gotten over the yrs. Thought about having it printed but never have.. not hard to get started a stop to any bass pro shop cabelasor amazon and you can pick up a starter combo grinder / stuffer . You can even purchase the sausage seasoning packs and casing there . They come with detailed instructions.. I tell everyone to try making a couple of those and when you get comfortable with making that raw sausage. Move into mixing your own seasonings , cure and get into smoking sausage. I warn everyone as well that it is cheaper to buy a link at the store as seasonings casings and the equipment isn't cheap. I also have a walk In smoker I built. Between my wife son daughter and myself we usually harvest at least 6 deer a yr and I use farm raised pork In. My sausage as wild port doesn't have a high enough fat content to make good juicey sausage. Saying that we make probably 6 different kinds of smoked link sausage. Smoked snak sticks,jalapeño and cheese summer sausage,breakfast sausage. Stuffed jalapeños.and just a bunch of ground meat to use throughout the yr. But I have probably over 100 different recipes and have tried them all. Making sausage is alot of work as well and usally takes two days to make smoked sausage, raw you can make in one day.. First day grind and mixing in seasonings and cure. Meat has to stay cold and sit for 24hrs after mixing in cure. Next day at 24 hr wait point I stuff all the sausage and hang on racks and into the smoker to smoke and get up to temp. After smoking you have to rinse sausage, vacuum seal label and into one of the two comercial freezer we have .. iam not sure how they know but when a batch comes out of the smoker family, neighbors and friends start to magically show up at my door haha.
@@mdv2043 that's alot of extra work and time isn't it....we make smoked sausage the same day. And I never heard of rinsing them off after they are smoked..
You people certainly know how to make sausage and things try putting fennel seed in with that sausage you will see a big difference in taste I think you will love it

Love your videos, you are one of the only people on UA-cam not being scared to TEACH about the skinning process and cooking of the meat you shot yourself. This is a question I've been having about pork versus wild hog but what cuts can you get from a domestic Pig that you might not find as good from a wild hog examples like the Pig jowls, skin, feet
