  • Romantic 3 course vegan dinner for two. Perfect for vegan Valentine's Day.
    Menu: Appetizer: Vegan lemon garlic scallops, Main course: spaghetti with tomato & basil & eggplant, Dessert: Silken tofu dark chocolate mousse.
    I designed a 3 course vegan dinner/menu for any romantic days that anyone can enjoy - by selecting 3 of the best tasting vegan/plant-based foods. They will be your favorite dishes for date nights. These recipes are budget friendly, super simple, easy & quick to make, and most importantly, gorgeous, decadent & delicious. You can make these with your partner and enjoy wonderful vegan Valentine's day or romantic any date nights AT HOME!

    I never comment on UA-cam videos but had to praise this video! I just made this dinner with my partner for her birthday and it turned out so amazing. The dishes were affordable, easy to make, tasted and looked incredible.
    A couple of suggestions for people trying out this recipe:
    - Get out all the ingredients prior to starting and do basic preparation i.e. washing the vegetables, peeling the onion and garlic, shelling pistachios. It allows you to focus all your attention with your partner on the actual cooking!
    - I tried to make the coconut cream, but it didn't get that 'creamy thick' texture even after whipping and and adding tapioca starch. I ended up putting the slightly runny coconut cream in the jar, then put the mousse in the freezer. We took the mousse's out about 5-10 minutes before serving.
    We also used Campari tomatoes instead of cherry and the pasta still worked out great.

    These recipes look phenomenal!! I will need to seek out king oyster mushrooms to give the scallops a try; I'm intrigued by the fried pasta method too 😋

    this was really perfect of a video, but please next time do portabella mushrooms, not oyster mushrooms. Not only is the name not vegan, but they're also carnivores. Since there're so few carnivorous mushrooms, it's pretty easy to find alternatives. You can even go with salsify, palm hearts, radish, etc.

      @@JunGotoVegan It is very hypocritical to asociate vegan recipes with the results of animal cruelty. Vegan recipes are made with plants and fungi. All vegan recipes should be named after the included plants and fungi.

      @@TheFettuck I think it is contradictory rather than hypocritical. I agree that it would be ideal to call them by what they actually are however those names exist for the following reasons: 1. most vegans weren't born vegan and they DO like the taste and mouthfeels of the foods they grew up eating in their culture. So we try to recreate the "same" dish from different sources. 2: It makes plant-based diet more appealing to people. I think what is really hypocritical is to call out vegans, who are making a more ethical and responsible choice, for being hypocritical for the animals, while actually consuming those animals.
