I think she forgot to put the Tamarind paste, obviously you can see that she has already prepared the Tamarind at the beginning of the video (the one that look like a real poo 0:17) and when she talks about the crushed peanuts 0:34 you can see that there's a small tray contained with brown water that is the result from Tamarind+water. Normally we put the Tamarind paste (water) together with the water to add a little sourness to the Pad Thai, as you may know most of Thai food should be equally seasoned with salty, sweet and sour. In Austria where I live, it is quite difficult to find fresh Tamarind. But luckily, there are some Asia Shops that sell Tamarind paste. Tamarind is probably one of the most important flavour in Pad Thai, it gives a citrus flavour that is not too strong and is not over powering the lime. I hope this could help you !

I personally just put Tamarind, dark soy sauce, salt, sugar, water in and mix them well, then add that in after adding noodles so the taste of the sauce goes in to the noodles :)

@@piercetheveil5 She addresses that. She says in her part of thailand they use the sweet raddish, not tamarind. Sweet radish is hard to find in the US though, so if you can't find it then definitely use tamarind instead.

Although it took me a while to understand what she meant by "less onion", but I love the fact that she used only one of each. One pan, one spatula, one knife... She even deveined the shrimp using that huge chef's knife. This is truly real life cooking and not some show where they need to use 5 different spoons and 7 little bowls for all the spices.

Very close but in Thailand we normally do the pad thai sauce separate( palm sugar +tamarind +fish sauce) and we use Garlic chives instead of spring onion
This recipe was a bit bare bones, but I am sure it still tasted great. I think it is traditional to use tamarind with palm sugar, fish sauce and black vinegar for the sauce. For garnishes I recall having a slice of banana flower, spring onions and cilantro.
