No, the books are included (you can see them as I go on the table behind my tablet; this set has three books, one in each of the three boxes the parts are divided into). I just find the LEGO tablet app a little more convenient - don't have to hold pages open, can zoom in to double-check details, etc.
It's just a cell phone on a light-weight tripod, so it isn't perfectly stable. At regular speed, you don't notice it, but when I make the time-lapse version, it's obvious.

Since it's sped up/time-lapse, I don't typically even record an audio track while I build (and I also don't usually play any music or anything while I build). I don't know what I'd say if I tried to add a voice-over...

Pro tip: slow the speed down to 0.25x, and you’ll have 4 times as long to admire that sweet comb over.
