    This is one of my family’s most favorite dishes, but I only make it on special occasions! It’s such simple recipe using basic ingredients, but the end result is a festive platter of roasted leg of goat/lamb that is fit for royal party!
    Ingredients:
    Approximately 3-4 lb goat back leg
    4 tbsp cumin
    4 tbsp coriander seeds
    2 tbsp black peppercorn
    On medium high heat, dry roast cumin, coriander seeds and black peppercorn in a pan, until they are fragrant and lightly change color. Do not let the spices burn otherwise they will have an over powering taste that may be bitter. Turn off the heat. And let it cool for a few minutes. Add 4 tbsp red chili flakes. and 2-3 tsp of garam masala. Mix this well. let the spices cool completely, then place in a coffee grinder.
    Grind the masala until it is not be too fine, nor too coarse. The masala mix is ready.
    Make deep slit on the goat leg.
    Ingredients for marinade:
    1 cup of yogurt.
    2 tbsp garlic powder
    2 tbsp ginger powder
    3 tsp salt or to taste
    Ground masala mix
    Juice of 3-4 lemons
    1/2 cup of raw papaya.
    1/4 cup oil
    Mix all above mentioned ingredients really well. Pour all over the goat leg front and back, and massage the marinade really well into the leg, especially getting into the slits.
    Cover and set aside in the fridge for 48 hours.
    Make sure you take it out of the fridge 2 hours before baking so it reaches room temperature.
    Preheat oven to 550 degrees. Bake leg in a big, wide baking tray/dish for 20 minutes uncovered. Take out of the oven, flip leg over, and bake another 20 minutes, uncovered.
    Remove from oven. Lower temperature to 375 degrees on the oven. Cover the baking dish with foil tightly. You can add two layers of foil if you want. Make sure it’s nice and tight so steam doesn’t escape. Bake for 2 hours at 375 degrees.
    Take out of the oven, remove foil, and serve hot with sides of your choice. This goes great with naan, rice, roasted potatoes and salad. Enjoy!
